- What difficulties did you encounter when opening restaurants?

- When you open a new restaurant, you need to pay special attention to all the details. Minor issues at this stage cannot be in principle! Any restaurant begins with a choice of a place and definition of an audience. Agree, it's silly to open a business restaurant in a residential area of ​​the city. Therefore, it is very important to correctly place the emphasis on which the whole concept of the institution as a whole will depend. For example, we understood very well when we opened the Ded Pihto restaurant on Lesnaya that it would be located in a business center and should correspond to the status of a restaurant where you can not only relax, dine, but also have a serious business meeting. In turn, "Grandfather Fir" on Myasnitskaya has a special charm of home comfort, where our guests can feel in a relaxed atmosphere, while remaining in the very center of the metropolis.

Another important point: the aromas of the kitchen, especially if it is located in the immediate vicinity of the guest room, should not prevent guests from enjoying the individual taste of the dish. On the other hand, visitors, first of all, pay attention to the interior and how they were met by restaurant employees. Therefore, the issue of design development and selection of hostesses should also be given the closest attention. And the final, but the key moment, for which people come to the restaurant, is the menu. If you can surprise your guests with the quality and presentation of dishes, they will give your institution the highest rating. As you can see, the recipe for success is simple, but it requires you to be actively involved.

- First of all, determination and a great desire to achieve a positive result. If there is healthy excitement in the soul, fire in the eyes, and time allows you to completely immerse yourself in creating your own business, then success is guaranteed! And believe me, any businessman should have these qualities, regardless of his gender.

- How to keep up with everything? After all, you need to take time for yourself, family, business.

First of all, learn to clearly plan your schedule, prioritize, and separate the important from what can be done later. Spend this time with your family. Be sure to select days, hours or minutes in your calendar that, regardless of the circumstances, you can devote to your loved ones. Let it be 10 minutes at lunch, which you spend on calling your mom, or Saturday evening for a trip with your family to nature, going to the cinema or the park. This is your holy time! Believe me, loved ones are waiting for these minutes with great impatience and they should feel your care and attention. We work, not only for the sake of replenishing a bank account, but also for the peace and well-being of our dear people.

- Do you choose staff for your establishments?

- If we talk about key positions, then I always conduct an interview myself! I trust the restaurant manager to appointments to other posts; she copes with this very well. At the same time, I definitely pay attention to the friendliness and appearance of the staff who greet our guests.

- In your opinion, is it harder for a woman to conduct business than a man?

- Speaking of the restaurant business, it is difficult to say easier or harder. It all depends on the person. A woman pays more attention to details that affect the overall atmosphere. Sometimes it happens like this: you come to an institution, everything seems to be fine, nice design and good cuisine, nice music, but there is no desire to return to this restaurant. And only a professional will understand that the reason for such a decision was poorly selected lighting, stuffiness, a smell from the kitchen, a crooked hanging curtain, a withered flower and many other details that make up the general situation. Men think more globally and do not pay attention to such details. On the other hand, it is more difficult for a woman because not many men, conservatives by nature, are ready to perceive her as a serious partner. Before a woman can show her business skills, she needs to gain favor and earn credibility. I encounter a similar attitude quite often.

Restaurateur, owner of the restaurant chain Ded Pihto- Is it possible to combine a family with a career?

- It is possible, otherwise there would be no family business in the world! The main thing is not to focus exclusively on work. Ideally, give your loved ones the opportunity to help you in business, this brings you together. If this is not possible, then share with them the impressions of the past day and spend all your free time together.

- Do you have a lot of free time and does it even exist?

- There is sorely lack of free time! My schedule is scheduled by minute. Like any active person, I try to spend my time on work, family and numerous interests - playing sports, creativity, vocals, oratory, and always on vacation. If you correctly distribute your time, then you can manage to do a lot.

- How to always stay in good shape, despite being very busy?

- First of all, it is a healthy dream! You can work in time pressure mode, but in the end, the consequences of chronic fatigue can turn into serious problems. Secondly, a healthy diet and regular exercise. And most importantly, you need to love yourself in a good sense of the word and even in the busiest schedule to find time to relax.

- Are there plans to further develop the business?

- Of course, given that "Grandfather Fir" is very popular! We are currently developing the concept of the third restaurant and are choosing a place for its opening. To be honest, it gives such great strength! This idea charges a new, colossal energy!

- What do you recommend to girls who dream of opening their own restaurant, beauty salon and more?

- Go to the dream and start with the smallest details! You cannot succeed if you do not know all the nuances and details of your future business. No wonder Japanese top managers go through the entire career ladder from the very beginning, learn their business from the very beginning. A mediocre attitude to business can result in the most sad consequences and serious financial losses. You need to live your own business, delve into all the details, follow trends and new products, and most importantly - find your own highlight, something that will allow you to distinguish yourself from your competitors. Show sincere care and attention to those people for whom you are opening your business. Even if you do not have an exclusive design, pathos reviews in the ratings, but your customers will come back to you again and again, then, believe me, this will be the best advertising and the key to successful development.
