Then pour the dry ingredients: 14 g of dry yeast, 60 g of sugar, a pinch of salt. Add 640 g sifted (preferably several times) flour. In a stationary mixer or combine, you knead the dough for 5-8 minutes, starting at minimum speed, and gradually increasing speed.
