Did you know? Azu is a traditional Tatar dish made from fried pieces of meat in combination with tomato sauce or tomatoes, often with pickles and other ingredients. In the countries of the East, azu is served hot as an independent second course.
  1. Wash the beef (500 g). Dry with a paper towel. First cut the meat into 4-5 mm thick slices along the fibers and then into strips (approximately 1 cm × 4 cm).

  2. Peel the onion (5 pcs.), Cut into half rings 3-4 mm thick.

  8. Cook over low heat for 5-7 minutes, stirring until the onions are soft.

  9. Add tomato paste (2 tbsp. L.) To the stewpan. Mix well, let it boil for 1-2 minutes.

  10. Pour chopped pickles to the meat.
    Add pickles to the dish.
  11. Pour the beef broth (1 cup.) Into the stewpan, mix.
    Top up beef broth.
  12. Cover the stewpan with a lid, simmer over low heat for 15-20 minutes.
    Stew the dish under the lid, mixing well.
  13. Heat the oil well in a pan (50 ml).
    Separately, heat the pan with vegetable oil.
  14. Put potatoes in hot oil.
    Put the potatoes in the pan.
  15. Fry until golden brown on all sides, without covering, almost until done.
    Fry the potatoes until golden brown.
  16. Transfer potatoes to the stewpan.
    We transfer potatoes to other components in a stewpan.
  17. Put a bay leaf (3 pcs.).
    Add bay leaf.
  18. Squeeze the garlic (3 cloves) into the stewpan with the help of a garlic press. Salt, pepper to taste.

  19. Stir the dish. Stew until tender (5-7 minutes). Serve hot.
