Pancakes mixed in water were often prepared in Russia, because the milk in the house was not all year round. Initially, they were always made with the use of yeast - so they turned out to be magnificent, and most importantly - voluminous, which is important for a poor peasant family. Such a dish was especially relevant on fasting days, and there are a lot of them in the year - about two hundred. Gradually, the dessert began to mix in the European manner - using soda, and recently even with mineral water. This saves time, and the products themselves are thin (after all, not everyone likes thick pancakes) and openwork.

Few secrets

To make lean pancakes not boring, but unforgettably tasty, we suggest using a few tips.

  • Always sift the flour - this way it better sticks to the rest of the dough.
  • If you want to diversify the dish, you can make pancakes with seasoning. To do this, before turning the pancake to the other side (but before the non-roasted side hardens), put pieces of fruit, vegetables, jam, etc. And then turn over and bake the second side already with the filler. If it is raw mincemeat, fry it takes longer.
  • When extinguishing soda, hold the spoon with it not over the dough, but over a separate bowl (or at least over the table) so that the unpaid soda does not get into the dough.
  • Instead of eggs, you can use ground flax seed soaked in boiling water (about 10 minutes).

Can pancakes be baked on water? Dough for pancakes with water, everything is prepared differently, depending on tastes and preferences. According to this recipe, they turn out elastic, which makes it easy to wrap any filling in them. The recipe for pancakes in water with eggs cannot be called lean or vegetarian, but it is ideal for people with lactase deficiency (milk intolerance).

You will need:

  • water - 1 liter;
  • chicken eggs - 4 pieces;
  • flour - 250-300 g;
  • refined vegetable oil - 2 tablespoons;
  • baking soda - 1 teaspoon;
  • vinegar 9% - to extinguish;
  • salt - 1 pinch;
  • vanillin - optional.

Cooking

  1. Pour the water into a convenient bowl and break the eggs into it (usually the recipe for thin pancakes on water involves dough with eggs, but you can also without them - for example, during fasting or in order to save).
  2. Put out the soda and send it to the bowl too.
  3. Pour in oil.
  4. Salt, beat with a mixer.
  5. Pour in flour and stir until lumps dissolve. The dough needs a liquid that resembles jelly.
  6. Leave to infuse for 20 minutes, so that the gluten is properly dispersed.
  7. Heat the pan and bake on both sides.
The classic recipe involves the use of plain water. But, if you want to make them more openwork, try adding savory soda without fruit flavors instead. In order not to dry the products, bake on the second side for no more than 5 seconds.

Sometimes housewives notice that pancakes on water with eggs are really thin, but some kind of rubber. This is convenient for wrapping the filling, although not everyone likes it, so to speak, in the language. We offer a slightly improved recipe for pancakes on the water with several secrets.

You will need:

  • water - 500 ml;
  • flour - 1.5 cups;
  • eggs - 3 pieces (you can do without them);
  • sugar - 2 tablespoons;
  • baking powder dough - 1 teaspoon;
  • sunflower seed oil - 3 tablespoons.

Cooking

  1. Break eggs, sugar and salt into a cup or bucket.
  2. Beat with a blender for at least 5 minutes (if you have a simple mixer, beat longer - until foam appears). It is this moment that will allow avoiding rubberiness.
  3. Pour a third of the water into the mixture and add flour and baking powder. We do not recommend pouring all the water at once - it will be more difficult to break the lumps.
  4. Now you can pour in vegetable oil and residual water.
  5. You can bake pancakes on water both in a well-heated frying pan and in a special crepe maker.

Serve the finished dish with any jam, condensed milk, berries. And if you pour less sugar into the dough, then unsweetened filling will do. Pancakes on water according to this recipe are thin and with holes thanks to a rather liquid test, which easily spreads in a pan.

On yeast dough

Yeast pancakes on water do not take long to prepare, contrary to associations by name (that is, you won’t need to sleep all night), and making them is actually not as difficult as it might seem at first glance. According to this recipe, the pancakes will be thick, but very tender and tasty.

You will need:

  • water - 5 glasses (4 - warm and 1 - boiling water);
  • flour - 4 glasses;
  • sugar - 1 tablespoon;
  • salt - 1 teaspoon;
  • oil - 1/3 cup;
  • dry yeast - a small bag.

Cooking

  1. Before you make pancakes without milk using yeast, you need to make a sponge. It’s not worth worrying - it’s not difficult to make a dough at home, especially in the presence of dry yeast, which makes life incredibly easy for modern housewives. To do this, take a suitable container, pour sugar, yeast and flour (one spoon with a hill) there. Add a little water so that the consistency resembles sour cream. After about half an hour, the dough begins to foam - this means that it is ready.
  2. Pour 4 cups of warm water, vegetable oil, salt and dough into a large container.
  3. Thoroughly mix all the ingredients.
  4. Add all the flour and knead thoroughly so that there are no lumps.
  5. Leave the dough in a warm place for about 1.5 hours.
  6. When the dough is suitable, pour a glass of boiling water into it and mix quickly. Such brewing will provide a beautiful openwork to our pancakes.
  7. Leave in a warm place for another 10 minutes.
  8. Heat the pan properly and bake yeast pancakes on both sides.
If the pancakes turn out to be dry, do not curl well, or the edges crumble, just leave them under a lid or towel for half an hour in a warm place and they will become soft, lush and even more delicate in taste.

The same recipe can be used for making pancakes with milk, but the option on the water is ideal for vegetarians, people with milk intolerance and on fasting days.

How to make pancakes on the water so that all households would eat them with pleasure? Quick and easy! If your relatives have a biased attitude towards lean desserts, you can use a little trick ...
