Step cooking
In order to facilitate the work as much as possible, as well as to exclude the possibility of making any errors, the whole process of preparing the yeast dough was divided into two simple steps.
Cooking dough
- Pour 3 cups of warm water into a deep bowl. Be careful, the temperature of the liquid should not exceed 35 degrees, but should not be lower than 25. Sift through a fine sieve 6 tbsp. l wheat flour. Thanks to this simple action, the dough during baking will rise better, and the products will gain airiness and lightness. In a bowl of water, add 6 tbsp. l prepared flour.
- In the resulting mixture, add one pinch of salt and 4 tbsp. l granulated sugar. And lastly, add 1 tbsp. l dry yeast. Mix the ingredients thoroughly until smooth. Try to avoid the formation of too large lumps. Cover the bowl with dough with cling film or a damp towel and place in a warm place for 15-20 minutes. The mass should increase in size by about half, and the surface is covered with bubbles. If you put the dough in heat at a temperature of about 30 degrees, then the waiting time for its maturation is halved. The finished sponge has a characteristic frothy cap on the surface.
Kneading dough
- In a prepared dough, add 1 cup of vegetable refined oil and mix well.
- Pre-sift through a sieve 8 cups flour and gradually add to a bowl with prepared ingredients.
- Hands gently knead the resulting mass. When the dough becomes homogeneous, it becomes obedient and leaves the hands well, lay it on a work surface and knead for a few more minutes. The dough should become soft, elastic and not stick at all to the hands and the surface of the table. The entire kneading process will take about 5 minutes.
- The dough is ready. Before forming products, he should be allowed to rest for several minutes.
