  • sugar cookies - 300 g;
  • sugar or powder - 150 g;
  • butter - 100 g;
  • sour cream - 300 g;
  • zest of 1 lemon (or orange);
  • eggs - 3 pcs.;
  • vanilla sugar - 1 sachet.

Cooking

  1. Grind cookies into crumbs. You can use a food processor or an ordinary kitchen hammer, after filling the cookies in a tight bag.
  2. Melt the butter, pour into the resulting crumbs and mix.
  3. Cut out a circle from parchment paper, grease it with butter on both sides, put it on the bottom of the crock-pot. Cut a wide strip of paper, oil and cover the walls of the form.
  4. Put cookies on paper, tamp as tightly as possible. The dense bottom will become a cake and the cottage cheese cheesecake in the slow cooker will not spread.
  5. Mix sugar and cottage cheese, beat eggs one at a time. Then add sour cream, zest and vanilla sugar. If you use a combine, do everything at low speed, but it is better to use a regular whisk. Since if the mass nourishes the air (with automatic kneading), your cottage cheese cheesecake at home will simply crack during baking.
  6. Pour the finished mass into the mold on the base of the cookies.
  7. If you are making cheesecake in a Redmond slow cooker, select the “Baking” mode for 50 minutes. In other multi-cookers, baking may need to be longer.
  8. After baking, do not open the cooker lid for at least an hour. Then remove the form from the multicooker, leave to cool to room temperature and directly in a saucepan cover with cling film, refrigerate for 3 hours, or better at night.
  9. In the morning, get the cupcake, carefully draw a knife along the sides of the mold with a knife if the mass has risen above the baking paper. And flip it on a plate, then flip it over again using the second plate.

  5. Pour the filling onto the base. Close the lid and set the “Baking” mode. If you cook a cheesecake in a Polaris slow cooker, the cooking time should be 1 hour 10 minutes, in Panasonic - 65 minutes.
  6. Leave the finished cupcake in a closed crock-pot for at least an hour, and then remove it from the mold and serve it to the table!
