Step cooking
- We start this dish with a batter, because it will take time for it to cool. Separate the yolks from the proteins of 4 eggs. Squirrels cover and send in the refrigerator on demand.
- Pour 100 ml of pure water to the yolks, add spices to taste. This time we put salt, ground black pepper, ground paprika, Italian herbs, thyme in eggs. We recommend adding a couple of tablespoons of wine or any other alcoholic beverage. This supplement will make batter even more crispy.
- Beat the mass until smooth. To do this, use a spoon, mixer or whisk.
- In small portions, add 200 g of flour, as a result we get a dense mass.
- You can check if the batter is enough thick. We collect the mass with a spoon, lift above the bowl, turn over, let drain. If the glass liquid from a spoon in 5 seconds, then we have got a lot of the desired consistency.
- We cover the batter with a lid and send it to the refrigerator for an hour. During this time, it will become even more dense.
- While the batter is cooling, let’s take care of the cabbage. Immediately pay attention that it is better to cook high-quality, fresh cabbage without damage. Its surface should be white without dark spots. Whatever dish you cook, soak the cauliflower in salt water. So it will be cleaned of any contaminants. To do this, pour one liter of water into a deep bowl, dissolve one tablespoon of salt in it, put the cabbage and leave for 10 minutes.
- Then we get it, divide it into small inflorescences.
- Now we need to boil it slightly. We send a pot of water to the fire, add 150 g of milk, a couple of a pinch of salt, one bay leaf, let it boil.
- Add cabbage in small portions. After the water boils with cabbage, boil it for 3 minutes. After cooking in such a solution, the cabbage will become soft, and its specific smell will disappear.
- Next, immediately place a container of cold water. We get the cabbage, transfer it to cold water immediately. Such a sharp change in temperature will stop the cooking process.
- We cover the plate with paper towels and lay out the cooled cabbage to dry.
- We spread the cabbage on the working surface and sprinkle with flour. Thanks to the flour there will be a strong coupling between the cabbage and the batter.
- Now we take out the proteins and beat them with a mixer in a lush mass.
- In small portions, add whipped proteins to the rest of the batter, mix.
- Pour vegetable oil into the pan so that it rises by 1-1.5 cm. We send it to the fire, let it heat. We bathe the cabbage in batter and put it in the pan.
- Fry on each side for 2 minutes, put on a plate covered with paper towels to stack excess fat.
- Cover the serving dish with lettuce leaves, spread the cauliflower in batter and serve. In addition, serve ketchup or any tomato sauce.
