French bread - a recipe for making crispy baguette at home

French bread - a recipe for making crispy baguette at home

Kitchen appliances and utensils:

  • oven;
  • parchment paper;
  • cling film;
  • mixer;
  • sieve;
  • deep containers of different sizes;
  • measuring cup or kitchen scale.

Ingredients

Premium wheat flour 375 g
Wheat starter 50 g
Pure non-carbonated water 215 g
Salt 8 g
Granulated sugar 5 g

Step cooking

  1. Put 50 grams of wheat starter in a bowl and add 75 grams of clean still water at room temperature, 75 grams of wheat flour sifted through a sieve. Mix all the ingredients well, cover the bowl with cling film and leave at room temperature for at least a couple of hours. The maximum for insisting on such leaven is time up to 12 hours. But the warmer the room, the faster the leaven will be suitable for further work.
    First you need to make a dough based on a wheat starter.
  2. When the leaven is ready, add 140 grams of pure water, 8 grams of salt, 5 grams of granulated sugar to it and mix well.
    Add mineral water, salt, sugar to the dough and mix.
  3. Pour into the mixer bowl and sift there through a sieve 300 grams of premium wheat flour.
    Pour the dough into the mixer bowl and sift the flour there.
  4. Knead the dough with a mixer at medium speed for five minutes.

  5. When the dough is ready, transfer to a deep container, cover with a lid or cling film and leave to come up at room temperature for three hours.
    The finished dough should stand for 3 hours in a warm place to rise.

  7. After the time has passed, spread the dough on a flat surface sprinkled with wheat flour. Divide the dough into two equal parts and round it.

  8. We cover the dough with cling film or a lid and leave to stand again for 15 minutes.
    Rounding both parts of the dough let them stand under the lid or towel for 15 minutes.
  9. Then we form a loaf from each part and roll it into a baguette.
    We form baguettes from the dough.
  10. Formed baguettes are placed on parchment paper, covered with cling film and left to rest for three hours.
    Formed baguettes should stand for another 3 hours and increase in volume.
  11. After the time has passed, we make characteristic oblique sections on each baguette and sprinkle with water. We shift onto a baking sheet with parchment paper.
    On baguettes we make oblique cuts, spray the products with water.
  12. Preheat the oven to 230 degrees Celsius and set our baguettes to bake. After 15 minutes, open the oven, sprinkle baguettes with water, lower the temperature to 200 degrees Celsius and bake another 20 minutes.
    We send the blanks to the oven.
  13. We take out the finished bread from the oven and let it cool.
    Fragrant French bread is ready.
