Cream (20%) 200 ml
Vegetable oil 2 tbsp
Butter 1 tbsp

Did you know?In order for the soup puree to be tasty and aromatic, you need to choose mushrooms that are not elastic in structure, but elastic. The fresher the mushrooms, the more their color is more dull and they are more fragrant (odorless spoiled mushrooms).

Step cooking

  1. We prepare all the ingredients, peel the onions and potatoes, wash the mushrooms under water. We chop 1 onion.

  2. Cut 2 potatoes into small pieces.

  3. We clean 400 grams of champignons and cut into thin slices. It’s better to take medium-sized mushrooms, they will cook faster and be easier to beat in a blender. We leave some plates for decoration.

  4. Pour 2 tbsp into the pan. l vegetable oil, put a small piece of butter (10 grams), stir until it dissolves.

  5. Add chopped onion and fry until transparent.

  6. After frying the onion, add chopped mushrooms, mix, fry over medium heat for 5-7 minutes (mushrooms are cooked by reducing them in size). Periodically do not forget to stir!

    Then add the potatoes to the dish.
  8. Salt to taste, add (optionally) a little ground nutmeg and mix everything.

  9. Pour boiling water so that the water is not higher than the level of vegetables. Cook over low heat for 20 minutes under the lid.

  10. Meanwhile, in a dry skillet, fry the mushrooms that we set aside to decorate the soup.
    Fry slices of champignons until golden, with which we will decorate the soup.
  11. Ready soup is important to beat so that it becomes homogeneous and creamy. Take a blender, pour the soup into the bowl and beat until the soup is creamy and uniform.
    We interrupt the finished soup with a blender until smooth.
  12. Pour the cream soup into a clean pan and add 200 ml of cream with a fat content of 20%.
    Return the soup to the pan and put the cream in it.
  13. The soup is heated over a fire without boiling. In the process of heating, we taste the soup and, if necessary, add salt and pepper. Turn off the cream soup, not bringing to a boil. Mushroom cream soup is ready! If you think that the cream soup is thick or you want a milky shade of taste, you can add more cream.
    Boil the dish for a few more minutes.
  14. Serve the dish in a deep plate, decorate when served with pre-fried mushrooms. You can also decorate with herbs (parsley, dill, green onions) at your discretion.
    When serving mushroom cream soup with champignons, you can decorate with fried mushroom slices.
