Step cooking

  1. Immediately you need to prepare the dough for khachapuri. To do this, in a deep bowl, mix 1 tsp. dry yeast and 1 tsp. granulated sugar.
    In a bowl we combine the yeast and sugar.
  2. In a small saucepan, mix 50 ml of milk and 100 ml of water. Put it on a small fire and heat a little, but milk with water should not be hot.
    Having mixed water with milk, we heat this mixture a little.
  3. Pour warm liquid into a bowl of sugar and yeast, mix the ingredients thoroughly so that there are no lumps, and leave for 15 minutes.
    Pour yeast with sugar into warm milk.
  4. While the yeast is brewing, melt 30 g butter in a saucepan and let cool.
    Melt the butter.
  5. Separately, sift 240 g of wheat flour and ¼ tsp. Into a bowl. salt, mix dry foods, make a small depression in the middle and pour in the yeast mixture.
    Sowing the flour and mixing it with salt, add milk and yeast to them.
  6. Then mix the dough well.
    Knead the dough.
  7. After all the flour has absorbed well, add melted and cooled butter to the dough, and then knead the dough for 10 minutes.

  8. The dough should turn out airy and stick a little to your hands, but you no longer need to add flour.
    The dough should turn out soft and airy.
  9. A deep container should be slightly lubricated with vegetable oil, then put the kneaded dough there, cover with a towel so that it does not weather, and put it in a warm place for 1 hour. During this time, the mass should increase by 2-3 times.
    That's how the dough for khachapuri rose so well.
  10. For the filling you need only 250 g of suluguni cheese, which should be grated on a coarse grater.
    For the filling, grate the cheese.
  11. When the dough comes up, put it on a table sprinkled with flour, and then gently knead. Press the dough with your hands to make a cake, and then roll it out slightly with a rolling pin.
    We crumble the dough, roll it into a cake.
  12. Leave a small part of the cheese to sprinkle the cake on top, and distribute the majority in the middle of the dough.
    We spread almost the whole cheese on the center of the dough.
  13. Connect the edges together in the center and pinch them well.

  14. Turn the cake upside down, stretch the dough slightly with your hands and roll it with a rolling pin, but do not overdo it so as not to tear it. Then flip the cake to the other side and again go with a rolling pin. In the middle there should be a small hole.
    Then you need to roll out the resulting test bag from both sides.
  15. Using a rolling pin, transfer the product to a baking sheet covered with parchment.

  16. In a small plate, beat the yolk lightly with a fork, and then use a special brush to brush the cake on top of it.
    Lubricate the product with a slightly beaten egg.
  17. Sprinkle cheese on top and clean in an oven preheated to 230 degrees, bake for 10 minutes.
