Cheese "Adyghe" or "Suluguni" 400 g
Sour cream 20% 200 g
Vegetable oil 2 tbsp. l

Step cooking

  1. Sift 250 g of wheat flour into a large bowl.
    Sift flour into a bowl.
  2. We carefully break one egg and separate the protein from the yolk. We send the protein in a bowl with flour.
    Add one protein to the flour.
  3. There we add 0.5 teaspoons of salt and 2 tablespoons of sunflower or other vegetable oil. Mix with a spoon.
    Then add vegetable oil and salt.
  4. Then add 200 g of 20 percent sour cream and mix with a spoon.

  5. We spread the dough on the board and begin to knead it. Mesim until it becomes homogeneous, smooth and almost no longer stick to your hands. If necessary, you can add a little flour. Add a lot of flour is not worth it, as the dough will become tight and clogged.

  6. Roll the kneaded dough into a kolobok, place in a plastic bag and send it to “rest” for 30 minutes.
    We put the dough in the bag for half an hour.
  7. In a clean bowl using a grater, rub 400 g of Adyghe cheese. If desired, it can be kneaded with a fork.
    For the filling, grate or mash the cheese with a fork.
  8. Add one yolk and 2 tablespoons of vegetable oil to it and stir well with a fork until smooth.
    Add the egg to the cheese, mix.
  9. After 30 minutes, we dust the board with flour and spread the dough on it. We roll the dough into a sausage and cut into 6 equal parts.
    Divide the dough into portioned portions.
  10. We take one part of the dough and, dipping it in flour, knead the palm into a cake.

  11. Then we take a rolling pin and roll it into a thin cake of a larger diameter.

  12. On the center of the cake we put 1 tablespoon of the filling.

  17. Melt butter (50 g) in a small frying pan or in a microwave. Remove the finished cakes on the dish. We grease the upper side of each still hot cake with butter with a brush or just a tablespoon and let it brew a little.
    Ready khachapuri is usually greased with melted butter.

  • You can make blackcurrant sauce. It is made from blackcurrant, grated with sugar, and chopped garlic and cilantro with the addition of suneli hop. The sauce can be spread or dipped in cakes.
