Step cooking

  1. Boil 500 grams of jacket potatoes until cooked. Peel the finished potatoes from the skins and cool.
    Cook the potatoes in their skins, then chill them and peel them.
  2. Mix 300 ml of kefir or ayran in a bowl, as well as salt and soda. Kefir should be at room temperature.
    Cook the dough on kefir.
  3. Gradually add the flour in small portions to the kefir in a bowl, while stirring the mixture with a whisk. When the flour is fully introduced, knead the dough with a spoon, then with your hands.
    Add a little flour to the mixture of kefir, soda and salt.
  4. At first, the dough will be sticky, but if flour is added, the stickiness will go away. Knead the dough with your hands for 5-7 minutes. If necessary, you can add a little flour (not more than 60 grams).

  14. In a dry hot pan, fry every flat cake for 2-3 minutes on each side until browned.
