Delicious Italian Dumplings - Ravioli

The article presents an accessible recipe according to which you can even cook real Italian dumplings, known to many as ravioli, at home. Learn how to make quick dough and aromatic mincemeat for them. You will see how easy it is to form ravioli using a special machine, as well as how to do without it to enjoy such a popular Italian dish.

Delicious Italian Dumplings - Ravioli

Kitchen appliances and utensils:

  • two pots;
  • mixer with a nozzle for kneading dough;
  • two deep bowls;
  • pan;
  • meat grinder;
  • rolling pin;
  • plate;
  • ravioli mold or sculpting machine;
  • skimmer.

Ingredients

Flour 200 g
Bow 2 pcs.
Carrot 2-3 pcs.
Eggs 2 pcs.
Olive oil 3-4 tbsp. l

Step cooking

  1. Cut 200 g of beef in medium slices, put it in a small saucepan, add carrots and onions, chopped into large pieces, cover with water and cook for about an hour and a half. Do not forget to salt and pepper the water.
    Boil beef with vegetables until tender.
  2. Pour 200 g of durum flour into a deep bowl and beat in two large chicken eggs. Using a special nozzle on the mixer, knead the dough. Of course, this can be done with your hands.
    Knead a light dough based on eggs and flour.
  3. During kneading, add about 1 tsp to the dough. olive oil.
    Add a spoonful of olive oil to an almost finished dough.
  4. Roll the finished dough into a tight ball and set it aside for 30 minutes.
    Roll the dough into a ball and leave for the time of preparation of the filling.
  5. Pour 1-2 tbsp into the pan. l olive oil and turn on the stove. Finely chop a small onion and send to a preheated skillet.
    Fry the onions in a pan.
  6. Finely chop a small bunch of fresh sage and send it to the pan when the onion becomes clear. Simmer for about a minute on low heat.
    Add chopped sage to the onion, and passier for a few more minutes.
  7. Remove the prepared pieces of beef from the pan, but do not pour the broth itself. Pass the meat through a meat grinder.

  8. In a deep bowl, mix the minced meat with the onion and sage. Add a few tablespoons of meat broth, as well as salt and pepper to taste. Mix everything thoroughly until smooth.

  9. Take 1/3 of the dough and roll it several times into a sheet. If you have a device for rolling dough - use it. If not, then this does not matter, you can always use a rolling pin.

  11. Next, use a forming machine to mold the ravioli. If you don’t have a device, take one sheet of dough, with a form, outline the circles, which then make ravioli, put small portions of minced meat in the center of the circles, moisten the place around the minced meat with some water. Cover the top with a second sheet of dough, and use a special shape to cut the ravioli.

    Did you know? If you do not have a special form for sculpting ravioli, you can cook the dish in the form of ordinary ravioli.
  12. Carefully separate the ravioli after using the machine.

  13. In a medium saucepan, boil water, salt it and add about 1 tbsp. l olive oil. Put ravioli in water and carefully monitor the cooking process, stir if necessary.

    When serving, Italian dumplings can be added with sauce.
