  1. To make Italian almond cookies, we need almonds and apricot kernels. We need these kernels to enhance the aroma of almonds. If you don’t have these, you can do without them at all, or add a little almond essence, it will also serve as an amplifier of taste.

  2. To begin with, using a coffee grinder, grind 200 g of almond nuts and apricot kernel (if any). Pour some nuts into the coffee grinder, add 50 g of sugar to them and grind.   4. Now gently mix the chopped almonds and protein meringues. You will get a homogeneous dough without lumps.

Bake italian cookies

  1. Then we cover the baking sheet with parchment paper, pick up the almond dough with a teaspoon, use the second teaspoon to spread it on the baking sheet. We leave a place between the workpieces, about a couple of centimeters, since in the process of baking cookies increase.
    On a baking sheet covered with parchment, spread the almond-protein mass with spoons.
  2. When all the cookie preparations have been laid out, pour sugar powder into a small sieve and sprinkle each cookie with it.
