The article will describe how to cook potato dumplings according to the Polish recipe. The main ingredients are few: potatoes, brisket, starch, onions. Thanks to the cooking method, a simple and delicious dish is obtained from simple products. It is also convenient that dumplings are prepared from boiled potatoes. It can be boiled in advance, even the day before making the dumplings. Potato dumplings can be eaten as a side dish for meat, or as an independent dish. And dumplings are very convenient in that the finished product can be cooled and frozen. For use, frozen dumplings are heated in boiling water or fried in vegetable oil.

Ingredients

  • Boiled potatoes - 1 kg
  • Starch - ¼ part of the amount of grated potatoes (about 120 g)
  • Onions - 1 head
  • Breast - 200 g
  • Salt, black pepper - to taste

Step cooking

  1. Rub the peeled boiled potatoes onto a fine grater. It is important to chop the potatoes on a grater, not a mixer or blender. Then you get the consistency necessary for the dumplings. If you still do not want to rub, then you can grind potatoes in a meat grinder. Three boiled potatoes on a fine grater.
  2. We spread the potatoes in a soup plate and level the surface with a tablespoon. put the potato mass on a plate and level with a spoon.
  3. With a spoon, divide the whole potato mass in a plate into 4 equal parts. We take out one part, and pour exactly the same amount of starch into the cavity, as before there were potatoes. Add starch.
  4. Knead all the potatoes with starch into a uniform dough. First we do it with a spoon, then with our hands. Mix the potato dough.
  5. It turns out a good, not sticky, smooth dough. Cut a small piece from it, roll it into a sausage. Cut the sausage into identical pieces. We divide the dough into portions, roll sausages out of them and cut into small pieces.
  6. Roll the balls from each piece. In the middle of the balls we make a small indentation with the little finger. we roll each piece of potato mass into a ball and make a recess in it with a finger.
  7. We spread all the prepared dumplings on a cling film or parchment. We spread the blanks on the work surface.
  8. Cut the breast (200 g) into thin, long strips. We send it to a preheated pan. Finely chop the brisket and fry in a pan.
  9. Cut the onion head into a small cube. When the brisket becomes transparent, add the onion slices to the brisket. Salt and pepper the contents of the pan until golden. Add chopped onion to the brisket.
  10. In a large pan, bring the water to a boil. Salt. One at a time, lower the batch of dumplings into boiling water. Boil dumplings in boiling water until tender.
  11. As soon as the dumplings surfaced, we remove them with a slotted spoon in a plate. When the dumplings pop up, take them out with a slotted spoon.
  12. Sprinkle the toasted brisket with onion on top. The dish is ready - we serve it to the table. In some recipes, dumplings after cooking are advised to fry in a pan until golden. So we talked about how to cook potato dumplings.
Did you know? If you salted potatoes during cooking, then you do not need to add more. If not, then taste and add the right amount of salt in the kneading step. The brisket in the pan should only be added if it is raw. There is enough salt in the finished smoked brisket.
