Step cooking

  1. Pre-defrost one octopus weighing approximately 1-1.1 kg at room temperature. Using a knife, carefully remove the fangs and rinse each tentacle and octopus head well under warm running water. Check that there is no contamination anywhere and place the octopus in a deep bowl. We remove the beak from the octopus, carefully wash the seafood.
  2. Pour water in a suitable pan to half the volume. Add 2-3 pcs. To water. bay leaf and sprinkle salt to taste. On medium heat, bring the water to a boil under a lid. In a saucepan, bring the water to a boil, salt it, add peppercorns and bay leaf.
  3. Take the octopus by its head and immerse it in boiling water 3-5 times depending on size. You will see how the octopus begins to change its shape. 2-3 times immerse the octopus in boiling water.
  4. Then put the octopus fully in water, cover and cook for about 10-15 minutes over medium heat. You can check the availability of the octopus with a fork, the meat should be pierced well and easily. Drop the octopus into the pan completely and cook.
  5. To remove the octopus from the pan, gently pry it with a fork and place it with your head in a glass on a plate so that the tentacles hang. In this position, cut the octopus's tentacles with kitchen scissors into small pieces of about 4-5 cm. It is more convenient to cut the finished seafood if you place it head in a glass.
