How to brew coffee in Turk - Turkish coffee

How to brew coffee in Turk - Turkish coffee

Kitchen appliances and utensils:

  • plate;
  • measuring utensils;
  • Turk
  • a teaspoon (or if there is a special long spoon);
  • electronic balance;
  • Turk.

Ingredients

Water 150 ml
Ground coffee 15 g
Brown sugar to taste (e.g. 1 tsp.)
We choose coffee of the "correct" grinding:Turkish coffee needs a very fine grinding. If you have a coffee grinder with extra fine grinding function, then there are no problems. If there is no coffee grinder, then buy ground coffee of very fine grinding. It is usually marked “for Turks” or “for Turkish coffee”. Do not take a large pack, because after opening the coffee should not be stored for more than 7-8 days (there will be a “wrong” taste and aroma).

Step cooking

  1. Measure 150 ml of water in a measuring cup, weigh 15 g of coffee on a kitchen scale. Now you can pour and pour the measured into everyday objects, which you will continue to use. For example, pour water into a glass and remember how much it is 150 ml, and count coffee with a teaspoon. Then the next time you will no longer need to get the scales and look for a measuring cup. Traditionally, a proportion of 10: 1 is used for Turkish coffee (that is, 10 mg of coffee is put per 100 ml of water). If you love stronger, increase the amount of coffee.
    You must first measure the required amount of coffee.
  2. Pour water into a slightly heated Turk on fire and pour in coffee.
    Pour water into the Turk and pour sugar.
  3. Also add brown sugar to taste. Water should be at room temperature or slightly warm, but not hot or cold.
    Add brown sugar.
  4. Mix everything thoroughly with either a special spoon with a long handle or a regular teaspoon. This is the only time you will interfere with coffee!
    It is at this moment that we mix the coffee.
  5. Put the Turk on fire (strong). Do not go far so as not to miss the moment when the foam begins to rise. As soon as the coffee foam begins to rise, remove the Turk from the fire, do not let the coffee boil.
    We put the Turk on the stove and wait for the cap to begin to rise on it.
  6. Let it stand for 2 minutes. Now you can pour it into the cup.
    Immediately remove the Turk from the fire and pour the drink into a cup.

    There is another option. When the froth begins to rise, remove the Turk from the fire and gently pour part of the foam into the cup, and return the Turk to the fire. And so a couple of times. Then turn off the heat and after a couple of minutes, carefully pour the drink into the cup.
  7. Coffee is drunk in small doses. It will be right if you give water along with coffee - it will wash the receptors in the oral cavity, and each sip of coffee will open a new aroma and taste. Enjoy!
    When serving with coffee, it is better to offer a glass of water.
Choose the "right" Turk or cezve: Turk must have thick walls so that the coffee heats up on all sides at the same time. The traditional materials from which the Turks are made are copper or silver (these metals conduct heat better). The neck should be slightly, 30% less than the base. If there is more, the coffee will brew too slowly, and if less, then, accordingly, too quickly. If you already have a Turk, and she is completely "not perfect" - do not be discouraged, unless the specialist will notice the difference.
