How to pickle pink salmon at home - the most delicious recipe

Kitchen appliances and utensils:

  • deep container for the preparation of brine;
  • a knife for fish;
  • cutting board for fish;
  • two-liter glass jar;
  • screw cap for a can.

Ingredients

Black peppercorns 1/4 Art. l
Allspice 1/4 Art. l
Bay leaf 3 - 4 pcs.
Coarse salt 6 tbsp. l
Sugar 6 tbsp. l
Water 1,5 l

Step cooking

  1. In a deep container we put 3 to 4 bay leaves, 1/2 tbsp. l a mixture of peppers (black and sweet peas), 6 tbsp. l coarse salt and 6 tbsp. l Sahara.
    Pour salt, sugar into a deep container, put bay leaf, peppercorns.
  2. Fill the entire contents of the container with 1.5 liters of boiling water.
    Pour boiling water over the spices.
  3. Thoroughly mix the resulting mixture with a spoon for several minutes and allow to cool completely.
    Mix the brine thoroughly and leave to cool.

Fish preparation

  1. While the brine cools, we clear the fish of scales and wash it under the tap.
    We wash pink salmon under running water.
  2. We cut off the fish’s head (later it will be possible to boil the ear), rip open the stomach and take out the insides, cut off the fins and tail (we don’t touch the bones and skin). Once again, thoroughly wash under the tap.
    We gutted the fish, cut off the fins.
  3. Then we cut the fish across with a sharp knife into portion pieces about 3 cm wide and put it in the refrigerator until the brine has completely cooled down.
    Cut the carcass of pink salmon into portions.

Salting process

  1. After the brine cools down, carefully place the pieces of pink salmon in a two-liter glass jar (if necessary, the jar can be larger).
    We put the pieces of pink salmon in a jar.
  2. Top the jar with brine (it is important that pepper and bay leaves fall into the jar).
    Fill the fish with cooled brine.
  3. Close the jar with a lid and thoroughly (for a minute) shake its contents.

    We leave the fish to marinate for at least a day.
  5. After 24 hours, the fish will be salted enough, it can be safely removed from the can and eat.
