Classic Roman Carbonara with Bacon 🍝

Classic Roman Carbonara with Bacon 🍝

Kitchen appliances and utensils:

  • hob or stove;
  • pan;
  • knife;
  • cutting board;
  • pan;
  • tongs for pasta;
  • grater.

Ingredients

Spaghetti 200 g
Eggs 3 pcs.
Parmesan 100 g
Bacon 150 g
Butter 25 g
Garlic 2 cloves
Freshly ground black pepper taste
Salt 1 tsp
Refined Vegetable Oil 1 tbsp. l

Step cooking

  1. In boiling water (you will need about 2 liters) we put 200 g of spaghetti (we also add 1 teaspoon of salt) and cook them for 5 - 7 minutes until al dente (this means that they must remain slightly solid inside).
  2. We cut the bacon (in an amount of 150 g) into thin strips, and then them into small slices of about 3 cm long and 1 cm wide.
  3. We put a frying pan on the fire and heat 20 g of butter on it (we also add about 1 tbsp of vegetable oil to it so that it does not burn).
  4. Put 2 whole cloves of garlic in a pan, lightly fry them, and then remove and set aside (we will no longer need them).
  5. We spread the bacon in the pan and fry it for 1 - 2 minutes until golden brown.
  6. We drain the water with spaghetti (at the same time, we collect about 100 ml of such water in a glass and set aside, as we will need it later).
  7. Spaghetti spread in a pan to the bacon and mix thoroughly, and then remove from heat.
  8. We divide chicken eggs (3 pcs.) Into proteins and yolks.
  9. We postpone the proteins (since we do not need them), and mix the yolks with 50 g of Parmesan pre-grated on a fine grater. Add a small amount of water to this cheese-egg mixture in which the paste was boiled (approximately 50-100 ml), then add it to the paste and mix thoroughly.
  10. Generously sprinkle spaghetti with freshly ground black pepper. Since bacon itself is quite salty, you add salt solely at your discretion after you try the dish.
  11. We spread the paste on a plate with the help of special tongs and additionally sprinkle with parmesan on top immediately before serving. The dish is ready, bon appetit!

Options for serving and decorating dishes

In Italy, carbonara is often served by decorating with raw yolk. To do this, put the spaghetti on a plate in the form of a nest, and place a yolk in the center of this "nest". However, you can safely do without it, decorating the pasta with a sprig of fresh basil. Carbonara goes well with light vegetable salad seasoned with olive oil and dry red wine.
