This dish has the second name - meat with French fries in the oven, in spite of the fact that such a combination does not exist in traditional French cuisine. It came to us from the XVIII century, when the favorite of Empress Catherine II, Count Alexei Orlov, visited the French king. And in honor of the arrival of the distinguished guest, focusing on the taste preferences of the Russians, the court chef created a sumptuous dish called Veau Orloff, which means “veal in Orlovsky”.

In France, the dish did not take root, but in Russia, because of satiety and “kinship,” we have more than the main ingredients. The name was logical in the French way and attribution to the menu of the festive table. At the same time, the dish is prepared very simply, it looks amazing and can be easily transformed by adding new components. How to bake meat and potatoes in the oven - let's find out together!

Classic recipe

You will need:

  • 1 kg of meat (which one do you like),
  • 1 kg of potatoes (approximately 10 pieces of medium size),
  • 500 grams of onion (3 large heads),
  • 200 grams of mayonnaise,
  • 200 grams of hard cheese.

Cooking

  1. Cut the meat into plates, beat off.
  2. Peel the potatoes, cut into plates.
  3. Peel the onion, chop in half rings.
  4. Lubricate the baking dish with refined oil.
  5. Slightly salt and pepper the meat, put it in a mold. Put onions on top.
  6. Salt and mix potatoes with mayonnaise, lay on top of onions.
  7. Cover the mold with a lid or sheet of foil, tightly wrap the edges.
  8. Place in an oven preheated to 200 °, bake for 30 minutes. Reduce temperature to 160 ° and bake for another 30 minutes.
  9. Grate the cheese, remove the mold from the oven, sprinkle with cheese, add a temperature of up to 200 ° and put the dish in the oven for 5 minutes to brown, without covering.

Secrets of a classic dish

  • The meat and potatoes in the oven in the original recipe were prepared using veal. But beef, pork, and even chicken will do. However, when using beef, it is necessary to peel the meat well, and increase the baking time to 1.5 hours.
  • For a special delicate taste, it is advisable to use homemade mayonnaise.
  • If you want to get very juicy meat, increase the volume of onions to 700-800 grams.
  • Do not mix the layers: the meat must be stewed in its own and onion juice to reach readiness.
  • Do not salt the meat in advance, as it will lose its juiciness. And cut the potatoes and put them into shape immediately after peeling, until it has darkened. Otherwise, the color of the potato will become unappetizing blue.

  • spices for pork (or basil, coriander and paprika),
  • salt pepper.

Cooking

  1. Rinse and peel the films, cut into slices 2-3 cm thick. Add spices and leave to marinate for 1 hour.
  2. Cut the onion into cubes and send it to the meat, slightly crush the mass so that the onion gives juice.
  3. Peel potatoes, carrots. Cut the potato into large pieces, carrots into slices.
