Step cooking
- To make a cupcake on sour cream, you will need two deep bowls. In one bowl, mix 1.5-2 stacks. wheat flour previously sifted through a sieve, 2 tsp. baking powder and 2 tbsp. l potato starch. Potato starch can be replaced with corn starch. Mix the dry ingredients well with a whisk.
- Combine 3 eggs, 1 stack in a separate bowl. sugar, 0.5 tsp salt.
- Beat well with a mixer until smooth. Beat for 5-7 minutes, the mass should lighten and increase in volume.
- Add 200 g of sour cream and 15 g of vanilla sugar to the liquid mixture. Mix well until smooth.
- Beating a liquid mass with a mixer, add to it a mixture of dry ingredients, in several stages.
- The finished dough by consistency should look like liquid sour cream.
- A baking dish, with a diameter of 18-22 cm, grease 1 tsp. flavourless butter or vegetable oil.
- Put the dough into the mold and place in the oven preheated to 180 degrees for 45-55 minutes.
- When the cupcake is ready, remove it from the oven to the grill and let cool slightly. Remove the cupcake from the mold, allow to cool completely. Cupcake is ready, bon appetit.
Cooking Tips
- Use a silicone or demountable baking dish to make the cupcake easier to remove.
- Instead of one large form, you can use portioned small molds, which should be filled 1/3.
- If desired, you can add nuts (peanuts, almonds), seeds (flax, pumpkin, sesame), dried fruits (raisins, dried apricots) and your favorite spices (cinnamon, cardamom, nutmeg) to the cupcake.
- For a citrus flavor, you can add the zest of lemon or orange.
- Sprinkle the cake with powdered sugar before serving.
- For lovers of chocolate, you can add chocolate drops to the dough, you can also add 1-2 tbsp. l cocoa, replacing them with part of the flour.
- A cupcake is perfect for tea, coffee or milk.
- Serve a cupcake with your favorite jam or condensed milk.
