Ingredients

  • Beijing cabbage - 3 pcs.
  • Salt - 3 stacks
  • Rice Flour - ½ Stack
  • Water - 3 stacks
  • Sugar - ¼ stack
  • Soy Sauce - 1 Stack
  • Chili pepper - 4-6 stack
  • Garlic - 1 Stack
  • Ginger - 5 cm
  • Onion - 1 pc.
  • Chives - 500 g
  • Radish daikon - 1 pc.
  • Seafood - 1 Stack

Step cooking

  1. Cut the cabbage into two parts in the middle. We carefully wash each part in water. Peking cabbage is cut in half.
  2. Salted each half of the head of cabbage. For each head of cabbage, you need about half a glass of salt (250 milliliters a glass). Salt every leaf. Sprinkle each leaf of cabbage with salt.
  3. We spread the cabbage in a bowl without turning the head of cabbage. Leave the cabbage for 2-4 hours. It should become soft and let the juice flow. Put the salted cabbage in a bowl.
  4. We wash the cabbage several times after it is salted. We squeeze the cabbage from the water and put it on a sieve or paper towels so that excess moisture leaves the cabbage. Cabbage let juice and become soft, now we wash it.
  5. Cook rice flour in a pan. We heat it until the flour boils, constantly stirring. The mass should thicken. Turn off the fire as soon as the flour begins to boil. Add sugar, mix and remove the pan from the heat. The flour should cool. Cook rice paste.
  6. Cut thin radish into strips. We cut daikon with thin strips.
  7. Cut the green onion into strips of about 5 centimeters. Put everything in a bowl. Chop green onions, add to daikon.
  8. Take a large bowl. Pour rice paste (flour), add soy sauce. Then hot pepper. Mix everything together. Add hot red pepper to the rice paste, mix.
  9. Grind garlic, onion and ginger in a blender. Grind ginger and garlic with a blender.
  10. Add to the sauce and mix. Add ginger and garlic to the hot sauce.
  11. Then we add vegetables there and mix. We spread the daikon and onion into the sharp mass.
  12. Then add seafood and mix. put seafood in a sharp paste.
  13. Now we coat this leaf with each sauce in Beijing cabbage with a ready-made sauce. Cabbage should be completely soaked in the sauce. We coat with the resulting mass each leaf of Beijing cabbage.
  14. Put the cabbage in a bowl, leave the cabbage in a warm place for a day. After that, put it in the refrigerator and store it there. According to this recipe, you yourself can make Korean cabbage kimchi in Korean.
