Classic rich beef kharcho soup with rice

Today we are preparing a kharcho soup. How to cook it - we will analyze step by step in our recipes with photos.

  • mortar or garlic press.

Ingredients

T-bone beef 500 g
Rice (dry) 100 g
Walnuts 100 g
Tkemali sauce 3 tbsp. l
Bulb (large) 1 PC.
Sweet pepper 1 PC.
Ground red pepper ½ tsp
Suneli hops 1 tbsp. l
Garlic 4 cloves
Tomato paste or sauce 60 g (1.5-2 tbsp. L.)
Bay leaf 3 pcs.
Salt Taste
Cilantro Small bunch
Cooking Oil 3 tbsp. l
Did you know?For kharcho soup, it is better to use meat with bone. It will make the broth rich, and the dish will acquire a more rich taste.

Step cooking

Cook broth

  1. Wash half a kilogram of beef, put in a pan and pour water to the top. Add 2-3 bay leaves and bring to a boil.
    We put the broth to cook.
  2. As soon as the water boils, it is necessary to remove the resulting foam. Cook over low heat for about two hours.
    When the broth boils, remove the foam from it.

We prepare products

  1. Rinse with 100 g of rice. Wash one bell pepper, remove the stalk with seeds and cut into small cubes.
    We wash the rice and cut the bell peppers into pieces.
  2. Make a mixture of nuts and garlic. To do this, grind 100 g of peeled walnuts in a coffee grinder, and crush 4 garlic cloves in a mortar. After mixing both ingredients together.
    Grind nuts and add garlic to them.
Important! If you do not have a coffee grinder or mortar, then you can use the means at hand. For example, finely chop the nuts with a knife, and let the garlic pass through the press.

Cooking soup

  1. Strain the finished broth through a fine sieve.
    Filter the finished broth through a sieve.
  2. Cut the cooled meat into small portions. If the meat was on the bone, then it must be removed.

  3. Return the beef to the broth and bring to a boil again.

  7. Add tomato paste and previously cooked garlic-nut mixture to the pan, mix thoroughly with onions.
    Add tomato paste to the onion, as well as a mixture of garlic and nuts.
  8. Stew for 3 minutes, then put the entire contents of the pan into the pan.
    We shift the frying into the broth.
  9. Add 3 tablespoons of tkemali sauce to the soup, pour half a teaspoon of ground red pepper and 1 tbsp. l condiments hops-suneli.
    Add tkemali sauce and seasonings to the soup.
  10. Add a small bunch of crushed cilantro and about 1 teaspoon of salt - taste it. Mix everything and boil under a closed lid for 3-5 minutes.
    Be sure to add chopped bottom to the dish, salt.
  11. Our dish is ready! Before serving, the soup must be infused for 10-15 minutes. Thus, it is finally saturated with the aromas of all spices and will be incredibly tasty. Spicy, hearty and tasty kharcho soup can be additionally decorated with herbs, it is recommended to serve with sour cream, black bread and garlic.
