For the preparation of compote, the most ripe and juicy tangerines should be used, they contain a large amount of juice. It is also advisable to take very sweet fruits, then you will need less sugar.

Step cooking

  1. 2 kg of mandarin thoroughly wash, peel and remove all white veins so that they do not give the compote unnecessary bitterness. In a deep bowl with a sharp knife, cut each tangerine across into three circles to make it easier to get juice from them.
    Tangerines are cleaned and cut into three pieces each.
  2. We press the chopped tangerines with the usual pusher until the pieces pour out the whole juice and the tangerines themselves turn into mashed potatoes.
    Knead mashed chopped tangerines in mashed potatoes.
  3. We transfer the resulting mass to the pan and pour 2 liters of cold water. If you want to get even more citrus aroma, chop the zest of mandarin with a thin straw and add to the pan.
    Put mashed tangerines in a saucepan and fill with water.
  4. We put on a strong fire, bring the compote to a boil, immediately reduce the heat to a minimum and cook for 15 minutes. Then turn off the fire and let the compote brew.
    Boil the compote for 15 minutes, and then let it brew.

    Did you know? According to this recipe, in the exact same way, you can make a compote of oranges and grapefruit. As well as a few peeled tangerine or orange slices, you can add it to a classic apple or strawberry drink. Citrus fruits give a fresh aroma and rich taste.
  5. When the compote is infused, filter it through a sieve to get a clear and aromatic drink. It can also be consumed with tangerines without rubbing through a sieve.

  6. Pour 220 g of sugar into a hot filtered drink, mix until it is completely dissolved, then cool. For flavor, you can add cloves, cinnamon, star anise or other spices to your compote to your liking.
    Add sugar to the compote and mix thoroughly until it is completely dissolved.
  7. Serve the drink better when chilled, you can add a few ice cubes and a couple of slices of fresh tangerine. You can also roll compote and enjoy this drink at any time. To do this, boil the compote with sugar, pour into sterilized jars, close the lids, cool at room temperature and put in a cool place.
    Mandarin compote is served chilled.
