Ingredients

Minced turkey meat 500 g
Onion 1 PC.
Large carrots 1 PC.
Garlic 1 clove
Chicken egg 1 PC.
Parsley 1/2 beam
White wine (optional) 60 ml
Minced olive oil 60 ml
Starch 1 tbsp. l
Wheat flour 4 tbsp. l
Breadcrumbs 1-2 tbsp. l
Salt 1 tsp
Black pepper (ground) taste
Vegetable oil for frying 2 tbsp. l

Step cooking

Preliminary preparation of ingredients

  1. 1 large carrot, peel, wash, grate.
    On a coarse grater, three carrots.
  2. 1 onion peel, wash, cut into small cubes.
    Grind the onion.
  3. Peel 1 clove of garlic, grate or pass through the garlic press.
    Grind garlic in any convenient way.
  4. Rinse 1/2 bunch of parsley (5-7 branches), shake water, chop finely with a knife or cut with kitchen scissors.
    Finely chop the greens.

Cooking the cutlet mass

  1. Put 500 g of ground meat from turkey meat in a bowl, add 1 egg, chopped garlic, chopped onion, salt, ground black pepper, 2 tbsp. l chopped parsley, grated carrots.
    Put the minced meat and all prepared ingredients in a bowl, add the egg.
  2. Then pour 60 ml of dry white wine (this is not an obligatory ingredient) and 60 ml of olive oil.
    For flavor add white wine, as well as olive oil.
  3. Pour one full tablespoon of starch - corn or potato.
    Add starch to the minced meat.
  4. Mix the cutlet mass thoroughly.
    Knead the minced meat thoroughly.
  5. If the minced meat turned out to be liquidy, add the breadcrumbs and mix well again.
    To force the meat to hold its shape better, add breadcrumbs to it.
  6. Close the finished cutlet mass with cling film and put in the refrigerator for 1-2 hours.
    Stuffed meat should stand for at least an hour in the refrigerator.

Cooking cutlets

  1. Remove the minced meat from the refrigerator, with wet hands form small round patties (4-5 cm in diameter).
    We form round cutlets.
  2. Roll them in flour.
    Bread cutlets in flour.
  3. Pour 2 tbsp into the pan. l vegetable oil, warm up. Vegetable oil needs to be heated gradually, poured onto a dry cold frying pan, because when it comes into contact with hot metal, the oil will burn. But the products should be laid out in a hot pan.     First, fry the cutlets on both sides in a pan until golden brown.
  4. Put the cutlets on a baking sheet and bake in the oven for 20-30 minutes at 180 ° C. So that the cutlets are softer and do not burn, you can pour a little water on the bottom of the baking sheet.

  5. Serve ready cutlets with any garnish. For example, lush potato puree with butter and dill or pasta with tomato sauce and grated cheese goes very well with this dish.
