Pike perch cutlets - a recipe for cooking in an unconventional way

Pike perch cutlets - a recipe for cooking in an unconventional way

  • mixer with a nozzle for beating dough;
  • meat grinder;
  • fine grater;
  • a frying pan;
  • plate.

Ingredients

Pike perch fillet 300 g
Onion 1 PC.
Chicken egg 1 PC.
Hard Parmesan 20 g
Garlic 1 tooth
Milk 100 ml
Fresh loaf 1/3 loaves
Vegetable oil 7-8 Art. l
Flour 5-6 Art. l
Turmeric 2-3 tbsp. l
Sugar taste
Salt taste

Step cooking

  1. Take 300 g of peeled zander fillet and cut it into medium-sized pieces. If your fish is frozen, it should first be allowed to thaw. If you use a whole carcass of fish for cooking, rinse it thoroughly under running water, cut off the fins and tail, separate the loin portion and clean it.
    Cut the pikeperch fillet into pieces.
  2. Cut the crusts from a third of a loaf of fresh loaf, put the crumb in a small deep bowl and pour about 100 ml of milk of any fat content.
    Soak the crumb of the loaf in milk.
  3. Peel one large onion and cut into medium slices.
    Onion cut into 4 parts.
  4. Remove the bread crumb from the bowl and wring it with your palm to remove any remaining milk. Pass the pieces of pike perch fillet, onion slices and a loaf soaked in milk through a meat grinder, forming minced fish for cutlets.

  5. Salt the minced meat to taste, and add a pinch of sugar and a few tablespoons of vegetable oil. Next, beat one large chicken egg into the resulting mass.

  6. Peel one clove of garlic and grate it on the smallest grater.
    Rub the garlic on the smallest grater.
  7. On the same fine grater, rub about 20 g of hard Parmesan cheese - this is the secret ingredient that will give your fish cakes an unusual special taste.

  8. Add the grated cheese and garlic to the minced fish and thoroughly knead all the ingredients. This can be done using a mixer with a nozzle for dough.
    Add the garlic parmesan to the minced meat and mix thoroughly.
  9. Next, prepare a breading for cutlets. In a separate bowl, mix approximately 5-6 tbsp. l flour and 2-3 tbsp. l turmeric. Thanks to this breading, cutlets will acquire a beautiful golden color instead of a pale fish shade.
    For breading, mix flour with turmeric.
  10. Form small cutlets from the minced meat with your hands, carefully roll them in flour with turmeric. Put the patties in a preheated pan with vegetable oil, fry them on all sides, including on the sides, until a golden crust is obtained. If you doubt that the cutlets are completely fried, bring them to readiness by sending them briefly to the oven.
    We form cutlets, breaded and fry until golden brown.
  11. Put ready cutlets from pike perch on a plate and serve. This dish is best served with mashed potatoes.
