Chicken stew with beans - simple, tasty and budget 🍗

Step cooking

  1. In a deep bowl overnight, soak about 300-350 g of white beans, pouring it with 500 ml of cold water. In the morning, the beans swell a little, transfer it to the pan, fill it with a liter of water and put on a small fire to cook for 1-1.5 hours.
    Pre-soaked beans set to cook.
  2. While the beans are boiling, we are preparing other ingredients. Rinse the chilli and cut into thin rings.
    Finely chop the chilli.
  3. For the dish you need 8-10 cloves of garlic. Half of the garlic is cut into small circles, and the other part is cut a little larger.
    We also chop the garlic.
  4. Peel 2 onions from the husks and cut into medium cubes. You should not grind the vegetable so that it is palpable in the finished dish.
    Chop the onion.
  5. We proceed to cutting the chicken carcass. Using a sharp knife, cut off all unnecessary skins, but if you leave a little white chicken fat, it will be used in cooking. We cut the chicken into portions and put in a separate bowl. From the leftover chicken, such as the neck, wings and other parts, you can cook the broth.

  7. Pour 50 ml of vegetable oil into a cauldron or thick-walled pan. After the oil warms up well, spread the chopped onion and fry over medium heat. So that the onion does not burn, do not forget to periodically mix it with a spatula.

  8. We put a frying pan on the stove and pour about 10 ml of vegetable oil. We give it a little warm up and lay out pieces of chicken fat. Then lay out the sliced ​​chicken pieces. Fry on each side for several minutes until fully cooked and a golden crust appears.
    In another pan, fry the chicken pieces.
  9. When the onion in the cauldron becomes slightly transparent, add the chopped chili pepper to it, mixing everything well. Fry for a few more minutes.

  10. Coriander seeds in an amount of 1 tsp. put in a mortar and grind with a pestle. Add the chopped coriander to the cauldron with onions and chili.

  11. After 3-4 minutes, we send coarsely chopped pieces of garlic to the vegetables in the cauldron. Mix the ingredients with a spatula and cook for 2-3 minutes.
    We spread garlic to onion with pepper.
  12. After 2-3 minutes, pour into the cauldron 300-400 ml of tomatoes in their own juice. You can make them yourself, or purchase them in the store ready-made.
    Add tomatoes to the onion in our own juice.
  13. To compensate for acidity, add 3 tsp to the cauldron to vegetables. Sahara. Thoroughly mix all the products with a spatula and cook over medium heat.
    To balance the taste, add sugar to the sauce.
  14. Drain the excess liquid from the beans through a colander and transfer it to the cauldron for vegetables. Pour additionally into the cauldron about 1 liter of water and mix the ingredients.
    We transfer the boiled beans to tomato sauce, add water.
  15. Salt the ingredients and season the oregano in the amount of 1/2 tbsp. l
    Add oregano.
  16. In the cauldron with beans, put the finished chicken meat.Do not forget to drain the fat that remains in the pan. We mix the ingredients in the cauldron and cook the dish under a closed lid for another 7-8 minutes. Fire needs to be made small.
    We shift the chicken to the beans in the sauce.
  17. After 7-8 minutes, cut a half bunch of cilantro and add to the cauldron along with finely chopped garlic. Mix. cover and cook for 5 minutes.
    In the almost ready dish, add the greens.
  18. After 5 minutes, the dish is completely ready and you can serve it on the table. The stew turns out to be very rich and appetizing. You can serve such a dish yourself or with a fresh vegetable salad.
