Step cooking
- To cook chicken in orange juice, we will use chicken thighs. Remove the peel from them, cut the bones and cut the flesh into small pieces. We got 550 g of pulp.
- Now make a batter. Sift 150 g of flour into a convenient dish, add 50 g of starch to it. Pour half a teaspoon of white ground pepper and salt, mix everything. We drive in one chicken egg and with a whisk knead the batter, gradually pour in 140-150 ml of water. The batter for batter by consistency is similar to thick sour cream. Pour the chopped pieces of chicken into the batter, mix so that each piece is in it and leave for 10-15 minutes.
- At this time, we send the pan to the fire and pour 500 ml of vegetable oil into it, let it heat well. Then put one piece of meat in the pan so that the pieces do not touch each other, and fry until golden brown on both sides.
- We cover the baking sheet with paper towels and spread the fried meat on them. So wipes absorb excess fat from meat. Now make the sauce. To cook it, we used a wok pan. We send the pan to the fire, pour 1-2 tbsp. l vegetable oil, add 2 tbsp. l sesame oil. Cut very finely 10 g of fresh chili pepper. Peel 3-4 cloves of garlic, rinse and chop very finely.
- Grate 10 ginger. We send all these ingredients to the pan and put 2 small dried chilli pods there. Fry, stirring constantly. Then add 25 g of regular sugar and 25 g of cane brown sugar. If you do not have cane, add only 35 g of white sugar.
- Pre-rub 1 tsp of orange zest and squeeze 100 ml of orange juice. Add this juice and zest to the pan. Here we add 3 tbsp. l soy sauce. Pour 30 ml of water into 15 g of starch, mix well so that there are no lumps, and pour into a pan, mix everything.
- We prepare the sauce for a few more minutes until it becomes thick. Take a salt sample, if necessary, add soy sauce. After this, pour the chicken into the sauce, mix so that each piece is covered with the sauce, and warm the dish for another couple of minutes.
- We lay the finished chicken in orange sauce on a serving dish, sprinkle with fried sesame seeds and chopped green onions.
