Step cooking
- First, prepare the noodle dough. Sift 280 g of wheat flour into a deep bowl, make a deepening in it and beat one chicken egg.
- About 1.5 tsp Dissolve the salts in 60 ml of water in a glass.
- Then pour water to the egg and stir by hand.
- Also, hand knead the dough to a uniform elastic lump, cover it with cling film and leave the dough to rest for 20-30 minutes. You can knead the dough without using a bowl, but immediately on the work surface, if it is so convenient for you.
- Cook the chicken stock in the meantime. For this you can take any parts of the chicken, the ham is very suitable. Rinse about 300 g of chicken and put in a pan, then pour 3-3.5 liters of cold water into it. Bring the water to a boil, then boil the broth over very low heat for about 40 minutes. Optionally, add a couple of bay leaves. If you have domestic chicken, then cook it for at least 1 hour. In this case, remove the resulting foam from the broth so that it is clean and transparent.
- Peel 300 g of onions, rinse and cut into small cubes.
- 150 g carrots also peel, rinse and cut into cubes. Then peel 200 g of potatoes, rinse well and cut into medium-sized cubes. Place chopped vegetables in a separate plate.
- Sprinkle a small amount of flour onto the work surface and transfer the dough onto it. Using a rolling pin, roll the dough into a very thin layer.
- Sprinkle the dough with flour and fold the layer in half, then fold it several more times to make a roll.
- Sprinkle a little flour on the kitchen board and place the dough on it. Then cut it into thin strips and leave the noodles to dry for about 30 minutes.
- When your broth is ready, remove the chicken from it.
- Place all chopped vegetables in the broth. If desired, you can strain the broth. Then salt the broth to taste.
- While the vegetables are boiling, separate the chicken from the skin and bones. Ready vegetables should be soft.
- When the vegetables are cooked, add the chicken meat to the pan and put some of the prepared noodles in it and cook for 3 minutes, during which time the noodles will be cooked. Put the rest of the noodles in a bag and store in the freezer until next time.
- When serving, sprinkle the noodles with black pepper and finely chopped herbs of your choice, which will give an even greater flavor and emphasize the taste of the dish.
