Step cooking

  1. First, prepare the noodle dough. Sift 280 g of wheat flour into a deep bowl, make a deepening in it and beat one chicken egg.
    We beat the egg into the flour.
  2. About 1.5 tsp Dissolve the salts in 60 ml of water in a glass.
    Dissolve salt in water.
  3. Then pour water to the egg and stir by hand.
    After adding water to the flour with the egg, knead the dough.
  4. Also, hand knead the dough to a uniform elastic lump, cover it with cling film and leave the dough to rest for 20-30 minutes. You can knead the dough without using a bowl, but immediately on the work surface, if it is so convenient for you.
    This is how the noodle dough should turn out.
  5. Cook the chicken stock in the meantime. For this you can take any parts of the chicken, the ham is very suitable. Rinse about 300 g of chicken and put in a pan, then pour 3-3.5 liters of cold water into it. Bring the water to a boil, then boil the broth over very low heat for about 40 minutes. Optionally, add a couple of bay leaves. If you have domestic chicken, then cook it for at least 1 hour. In this case, remove the resulting foam from the broth so that it is clean and transparent.
    We put the chicken to boil, when boiling, remove the foam.
  6. Peel 300 g of onions, rinse and cut into small cubes.
    Grind the onion.
  7. 150 g carrots also peel, rinse and cut into cubes. Then peel 200 g of potatoes, rinse well and cut into medium-sized cubes. Place chopped vegetables in a separate plate.
    Dice the carrots.
  8. Sprinkle a small amount of flour onto the work surface and transfer the dough onto it. Using a rolling pin, roll the dough into a very thin layer.
    Roll out the dough into a very thin layer.
  9. Sprinkle the dough with flour and fold the layer in half, then fold it several more times to make a roll.
    Fold the dough in layers.
  10. Sprinkle a little flour on the kitchen board and place the dough on it. Then cut it into thin strips and leave the noodles to dry for about 30 minutes.
    Cut the resulting roll from the noodle dough.
  11. When your broth is ready, remove the chicken from it.
    We take out the cooked kryts from the pan.
  12. Place all chopped vegetables in the broth. If desired, you can strain the broth. Then salt the broth to taste.
    We put vegetables in the broth.
  13. While the vegetables are boiling, separate the chicken from the skin and bones. Ready vegetables should be soft.
    The meat is separated from the bones.
  14. When the vegetables are cooked, add the chicken meat to the pan and put some of the prepared noodles in it and cook for 3 minutes, during which time the noodles will be cooked. Put the rest of the noodles in a bag and store in the freezer until next time.
    When the vegetables are ready, return the meat to the soup and add the noodles.
  15. When serving, sprinkle the noodles with black pepper and finely chopped herbs of your choice, which will give an even greater flavor and emphasize the taste of the dish.
