Ingredients

Chicken fillet and thigh 300 g
Carrot 1 PC.
Bow 2 pcs.
Sweet pepper 50 g
Tomatoes 50 g
Water 1,5 l
Tomato paste 20 g
Vegetable oil 2 tbsp. l
Salt pepper taste
Celery 2 stems
Garlic 2 cloves
Dry paprika 0.5 tsp
Noodles 100 g
Cilantro, parsley, dill, chives 2 branches

  1. For a tasty and satisfying lagman, you need to prepare a rich broth from chicken bones and vegetables. From vegetables you will need onions and carrots. We clean and cut them into large pieces.
    We cut onions and carrots in large pieces.
  2. It is better to fry vegetables immediately in a pan with a thick bottom, but if you do not have one, you can use a pan. Pour 1 tbsp into the pan. l vegetable oil, heat well and send the vegetables to be fried.
    We spread the vegetables in a pan with a thick bottom and lightly fry in vegetable oil.
  3. Next, we need any chicken bones - it can be a wing, a soup set, a bone from the thigh. Add them to the pan and fry with vegetables.
    Add chicken soup set or wings to vegetables.
  4. Fill with 1.5 liters of cold water and cook, covered with a lid, over low heat for 40 - 45 minutes.
    Fill everything with water and leave the broth to boil.
Important! To obtain a saturated, concentrated broth, use the correct ratio - 4 liters of water per 1 kg of bones.

Cooking lagman

  1. Chicken meat - fillet and meat from the thigh, rinse and cut into medium pieces.
    Cut the chicken into pieces.
  2. Cut the onion into thin half rings, chop the garlic with a knife.
    Grind onions and garlic.
  3. In a pan with a thick bottom or pan, heat 1 tbsp. l vegetable oil, add onion and garlic, fry. After a few seconds, add the chopped meat and 20 g of tomato paste, which will add sourness and thicken our soup.
    Add meat to the vegetables in the pan, mix.
  4. We clear the bell peppers from the seeds and cut into thin strips, add to the pan.
    We chop the bell pepper and send it to the pan.
  5. Cut the tomatoes into small cubes, send them to the pan to fry.
    Cut the tomato and add to the pan.
  6. We cut celery stalks into thin strips and send to the rest of the ingredients, it will add freshness and an unusual flavor to the dish.
    Add to the prepared vegetables also sliced ​​celery stalks.
  7. Fry the vegetables with chicken for a few more minutes and pour in the finished chicken broth, bring to a boil and simmer for 30 minutes. At the end of cooking, salt, pepper to taste, add 0.5 tsp. paprika. You can add other spices that you like.
    Pour vegetables with previously prepared broth, add spices at the end.
  8. Separately, cook until ready spaghetti or homemade noodles, recline in a colander. Boil the noodles in advance so that it does not cloud the broth, and does not boil too much.

  9. In a bowl for soup, put the noodles and pour hot broth with vegetables. Sprinkle with finely chopped dill, parsley, cilantro and green onions. Lagman with the chicken is ready! Enjoy your meal!
