Probably in every family there is a lover of meat dumplings, but not every housewife has time to cook them. Often we refuse this delicious dish just because we don’t want to start modeling for the whole evening. Lazy dumplings are no less tasty than traditional ones, but they are prepared much easier and faster.

Pan recipe

Lazy dumplings in a pan cook very quickly and without much hassle. This is a tasty meat dish with the addition of vegetables, which does not require much time.

For the test you will need:

  • flour - 3 cups;
  • eggs - 3 pieces;
  • water (warm) - 1 cup;
  • salt - ½ teaspoon.

For minced meat you will need:

  • any meat - 500 g;
  • onions - 1 large head;
  • salt, spices - to taste.

Lazy Meat DumplingsFor a vegetable pillow you will need:

  • onions - 1 large head or 2 small;
  • carrots - 2 medium pieces;
  • garlic - 2 cloves (or more if you like more sharply);
  • vegetable oil - for frying vegetables.

For the sauce you will need:

  • sour cream - 150 g;
  • water - half a glass;
  • Suneli hops to taste.

Cooking

  1. Dissolve the egg and salt in warm water. Pour into the sifted flour and mix thoroughly, gradually adding more and more flour to the “liquid center”. Knead the dough and set it aside for “spreading”, covering with a towel or wrapping in a plastic bag for about half an hour.
  2. Grate the carrots and chop the onions (carrots can also be easily chopped if you don’t like grated), stew them together in a pan for about 4 minutes. Add finely chopped garlic at the very end.
  3. Grind meat and onions in a meat grinder or blender (or chop them by hand, so the minced meat will be more textured), add salt and seasonings. Spices are best taken freshly ground - so they will give more flavor and taste to the dish. Knead well so that the salt is completely dissolved and evenly distributed.
  4. Roll the dough into one large layer with a thickness of not more than 1 mm. Spread minced meat on it with a thin layer, leveling with a fork.
  5. Gently roll the roll, avoiding air bubbles under the dough. Lock the edges of the resulting roll.
  6. Cut with a sharp knife into small pieces - rolls 2-3 cm thick.
  7. Spread about a third of the vegetables on the bottom of the pan, and place the dumplings with the slices on top. Lay so that the rolls do not touch (vegetables can be laid between them). Top with the remaining vegetable cushion. When laying rolls on a vegetable pad, do not forget to pinch the lower slices so that juice does not flow out and dumplings do not lose their taste.
  8. Prepare the sauce: mix sour cream with water and suneli hops (if you do not like this seasoning, you can use black pepper, paprika or something else to your taste). Pour the mixture of dumplings. If desired, butter can be put on each roll.
  9. Cook for about 30 minutes under a lid over low heat.

Serve the dish hot, garnished with herbs and fresh vegetables. To lazy dumplings, you can serve sour cream, spicy sauce, garlic-sour cream sauce, etc.

Cooking in the oven

The recipe for lazy dumplings in the oven is not much different from the recipe in a pan. But in the oven you can prepare a serving for a large family, without standing constantly at the stove.

This step-by-step recipe for lazy dumplings is designed for a standard portion, when cooking on a large baking sheet, the ingredients simply double.

Cooking

  1. Prepare the dough: stir the egg and salt in water, pour the mixture into the sifted flour and mix gently, then transfer to a table sprinkled with flour, and knead the dough until elastic. Cover with a towel or cling film and leave for 30-40 minutes (during this time, vegetables and filling will be cooked).
  2. Grate or chop carrots finely, chop onion into small cubes. Put onion in a preheated pan and fry it with vegetable oil for 1-2 minutes. Then add the carrots, mix everything and simmer under a closed lid for another 3 minutes.
  3. Prepare the minced meat: roll meat and onions in a meat grinder, add salt and seasonings to taste.
  4. Roll out the dough into a large oval-shaped layer (it will be more convenient if you get a rectangle with rounded corners).
  5. Put the minced meat on the dough, evenly distributing it, and roll the roll. Suture the free edges. Cut into circles with a thickness of 2-3 cm.
  6. Put the rolls on a deep baking sheet, after first covering the lower edges. Do not stack too tightly so that they do not stick together.
  7. Prepare the tomato sauce: dissolve the tomato paste in water, add salt (optionally seasoned with spices).
  8. Cover the lazy dumplings with vegetables and pour tomato sauce about two-thirds high (if the sauce is not enough, quickly cook more).
  9. Lazy dumplings are prepared in the oven for about 30 minutes at a temperature of 220 degrees.
  10. Serve the dish hot, garnished with fresh herbs and vegetables, watering with chilled sour cream or other sauce.

Slow Cooking Recipe

If you need a small portion of lazy dumplings, you can easily cook it in a slow cooker.

  • water - 80 ml;
  • egg - 1 piece;
  • flour - 230 g;
  • salt - ¼ teaspoon.

For the filling you will need:

  • any minced meat - 350 g;
  • onions - 1 head;
  • salt and spices to taste;
  • greenery.

Cooking

  1. Add warm (but not hot) water, salt and an egg to the sifted flour. Mix everything gently, gradually increasing the density of the dough, adding flour.
  2. Knead the dough for elasticity and let it lie under a towel or film for about 30 minutes.
  3. Prepare the filling: pass the meat with onions through a meat grinder or chop in a blender. Add salt, spices and some greens.
  4. Roll the dough into a thin sheet and put the minced meat on it. Flatten it so that it is the same thickness throughout the sheet.
  5. Twist the roll and snap the edges.
  6. Cut the roll into slices 2-3 cm thick. Put on the bottom of the bowl.

In a slow cooker, lazy dumplings can be prepared in several ways - at the request of the hostess and depending on the model of the device.

  1. In the “Baking” mode, 30 minutes - put the dumplings in a bowl, fill with water so that it almost covers the dumplings and cook for 30 minutes (if the dumplings turned out to be large, increase the cooking time).
  2. “Steamed” - put the products on the steaming dish, pour 2 cups of water into the bowl and cook for 25-30 minutes.
  3. “Stewing” - put a pillow of fried vegetables on the bottom of the bowl, spread the dumplings on top and cover with the remaining vegetables. Stew for 40-50 minutes (in a pressure cooker, when cooking under pressure, it will take about 20 minutes to simmer from the moment of heating).

Serve lazy dumplings with greens, sour cream (preferably chilled) or spicy sauce.

Cooking Tips for Lazy Dumplings

Here are some tips on how to cook lazy dumplings so that they don't look like an ordinary meat dish.

  • So that lazy dumplings do not fall apart, you can add one egg to the stuffing.
  • For juiciness of minced meat, you can add a little cold water into it.
  • A small amount of cucumber pickle will give an interesting taste to the minced meat (but in this case, be careful with salt).
  • The thinner you roll the dough, the tastier the dumplings will be.
  • The recipe for lazy dumplings in a pan can be improved by frying the rolls until golden brown (but do not overdo it, otherwise they will turn out dry).
  • For a vegetable pillow, you can take any vegetables to your taste (tomatoes, eggplant, bell pepper, zucchini, cabbage, etc.)
