Bean Lobio - Secrets from a Georgian dish 🥗

garlic 6 cloves
cilantro 2 bundles
salt 1-1.5 Art. l
black peppercorns 20-25 pcs.
Bay leaf 3-4 pcs.
seasoning hops suneli 1 tsp
butter for frying

Step cooking

  1. First you need to prepare the beans. It can be soaked in water for several hours or all night. If you put the beans to cook immediately, the cooking time will be 3-3.5 hours. Rinse thoroughly with 500 g of beans and fill it with water 1: 2.
    Fill the beans in advance with water so that it swells.
  2. When the beans have stood still enough, send it to boil, you can leave this water, or you can replace it with fresh. Bring the beans to a boil, and then reduce the heat and cook for one and a half hours, periodically adding liquid. You can check the readiness with the help of an ordinary spoon, slightly pressing on the beans. If the bean culture has turned into mashed potatoes, then it is ready.

  3. While the beans are boiling, you can start cooking onions. Peel 3 onions, rinse and finely chop into cubes.
    Grind the onion.
  4. Put the pan on a fire to bask, and then send several tablespoons of butter to it. If you prefer vegetable oil, then you can use it.
    In a pan we heat a piece of butter.
  5. When the butter has completely melted, add chopped onion to it and fry it until translucent.
    Spread onion on a little and fry until soft.
  6. Slightly fried onions, add to the pan to the boiled beans and leave it to boil for 10 minutes.
    Add the fried onions to the beans, cook for another 10 minutes.
  7. While preparing the main ingredients, grind 2 bunches of cilantro (leaves with tails).
    Grind cilantro.
  8. You will also need to finely chop 6 cloves of garlic.
    Grind the garlic.
  9. Now again you can start cooking lobio, for this crush the whole red boiled bean with a nibbler of potatoes.
    Mash beans over.
  10. Add 3-4 to this mass. bay leaf and 20-25 pcs. black pepper, and then mix lobio and leave it on fire for 2 minutes.
    Add peas and bay leaves to the dish.
  11. Add chopped cilantro with garlic to the pan, then send there 1-1.5 tbsp. l salt and mix, and then pour 1 tsp. seasoned hops-suneli, mix again and leave under the lid over medium heat for 10 minutes.
    Add garlic and herbs to the dish.
  12. Turn off the gas, lobio is done. Before serving, decorate the dish with several sprigs of parsley or cilantro.
    Appetizing bean lobio is ready.
