It is known that in the Middle Ages in Russia semolina was not boiled, but languished. They did this in furnaces where the temperature did not reach 100 degrees. Thanks to this heat treatment, the grains swelled, protein and starch were not destroyed. The porridge was viscous, but with clearly defined grains.
