Masala Tea - A Recipe for Spiced Indian Tea

Kitchen appliances and utensils: stove, coffee grinder or stupa (if any), pan, spoon, cups for the finished drink.

Water 200 ml
Black leaf tea 2-3 tsp
Sugar 2-3 tsp
Fresh or Dry Ground Ginger 1/2 tsp or 1 pinch
Ground cardamom 1 pinch
Clove 2 buds
Ground black pepper 1 pinch
Cinnamon 1 pinch
Other spices (anise, star anise, fennel) - if available 1 pinch

Step cooking

  1. Pour into a pan a glass (200 ml) of water and milk and send to warm up on the stove. Make the fire small so that the liquid warms up slowly and does not try to "run away" from you.
    Pour water and milk into a saucepan.
  2. While the liquid is warming, chop the fresh ginger root. The smaller it is possible to crumble it, the better it will give its flavor to the drink. You can grate it. If you haven’t found a fresh root, it will be completely replaced by dry ground. It will need half a teaspoon.
    As finely chopped ginger root.
  3. If you have a coffee grinder, then clove buds are better to grind in it to a finer state. If such an aggregate was not found, simply crush the buds in the mortar. If she was not there, crush them with a rolling pin or flat side of a knife. This we, again, are trying to extract as much flavor as possible from the spice.
    Grind cloves in any convenient way.
  4. While we performed the described manipulations, the liquid on the stove was already heated, and we begin to conjure: we send spices one after another. First ginger, then cloves, a pinch of cinnamon, cardamom and black pepper. Further, if in your arsenal there are such spices as anise, star anise and fennel, then add them by a pinch - this will make the aroma richer. Cook the mixture over low heat for about five minutes so that the spices saturate the liquid with their aroma.
    In the hot mixture of water and milk we add all the necessary spices.
  5. While the mixture is boiling, add 2-3 teaspoons of sugar. Do not rush to make a very sweet drink right away. Its charm lies in the spice, so do not hammer it with sweetness. If necessary, you can always add sugar later, focusing on your taste.
    Now you can add sugar to the drink.
  6. Five minutes later, when your kitchen was already filled with an enchanting aroma, it was the turn of the last ingredient. Pour 2-3 teaspoons of large-leaf black tea into a hot liquid, mix well and let it brew, leaving the drink to cook on low heat for another 5 minutes. At the same time, do not forget to keep an eye on him and periodically stir, watching how the tea leaves open.
    Last add black tea to the mixture.
  7. After 5 minutes, turn off the fire, cover the pan with a lid and let the drink brew for another 10 minutes.
    Masala tea, according to the recipe, should be infused for 10 minutes.
  8. We filter the drink through a sieve and pour it into cups. Since the liquid evaporates a little during the preparation of tea, the aromatic drink will last only 1 large or 2 small servings. If you want to drink a strange family with a big family or guests who have looked at the light, then proportionally increase the number of ingredients and prepare a drink for everyone at once.
    Before serving, it is better to strain the drink.

Tea turns out to be very aromatic, slightly spicy (this is facilitated by ginger and black pepper) and literally "surprisingly tasty."
