Kitchen appliances and utensils: slow cooker, mixer, bowl, cutting board, spatula, grease brush, knife.

Ingredients

Granulated sugar 200 g
Flour 380 g
Soft butter or margarine 200 g
Carrot 250 g
Eggs (large) 3 pcs.
Walnuts 30 g
Baking powder 20 g (2 packs of 10 g each)
Vanillin 1.5 g (at the tip of a knife)
Canned pineapple 580 g (1 can)
Soft curd cheese 500 g (2 packs)
Powdered sugar 2 tbsp. l

Step cooking

Preparatory work

You need to remove 200 g of butter in advance to make it soft. Wash, peel and grate 250 g of carrots on a fine grater. If you have juicy carrots, squeeze it. Peel and grind 30 g of nuts.

You must first grate the carrots, chop nuts.

Cooking dough

  1. Break 3 eggs into a bowl, add 200 g of granulated sugar and beat well with a mixer.
    Pour sugar into the eggs.
  2. Mass should increase by 2.5 - 3 times.
    Beat eggs with sugar until fluffy.
  3. Add 180 g of softened butter to the resulting mass (leave 20 g to grease the multicooker) and mix everything well.
    Add oil to the egg mass and beat again.
  4. Add nuts, carrots and mix again.
    Add nuts and carrots to the blank.
  5. Finely chop a couple of pineapple rings into cubes, add to the dough and mix well with a spatula or spoon.
    We also add pineapples and mix the whole mass.
  6. Sift flour into a separate bowl. Add about half the flour, vanilla on the tip of the knife, 20 g of baking powder to the dough and gently mix them with the spatula from the bottom up in one direction.
    Gradually pour flour into the dough.
  7. Add the rest of the flour and continue kneading. The dough will turn out quite thick.
    Add all the flour and mix the dough until smooth.
  8. Lubricate the bottom and sides of the multicooker bowl with the remaining butter using a brush.

  9. Lay out the dough and evenly distribute it on the bottom of the multicooker with a spatula.
    We spread the dough into the bowl and level it.
  10. Close the cooker lid. Cook in the “Baking” mode 1 h 10 min. At the end of the specified time, open the multicooker lid and check the readiness of the biscuit with a toothpick. If it is dry - the biscuit is ready.

Important!After baking, leave the biscuit for 10 minutes. in a slow cooker. Then it will be easier to take it out.

Cooking cream

  1. Cut the remaining pineapples into small cubes.
    Dice canned pineapples.
  2. For cream, put 500 g of cottage cheese in a clean bowl, add 2 tbsp. l icing sugar and stir well.
    To prepare the cream, mix the curd cheese with powdered sugar.
  3. For taste add 1 tbsp. l canned pineapple syrup and stir well again. The cream is ready.
    Add a little pineapple syrup to the cream.

Cake assembly

  1. Remove the biscuit from the multicooker and let it cool completely. To facilitate this process, use a double boiler basket. It is also convenient to cool a biscuit on it.
    Cool carrot cake.
  2. Cut the cooled biscuit into 3 cakes.

  4. Set the next layer and repeat the action.
    Just lubricate with cream and sprinkle with pineapple slices of the second crust.
  5. Coat the cake with the remaining cream on top and around the edges.
    Cover the cake with a third cake and coat it on top and sides with cream.
Alternatively, you can use bitter chocolate to decorate a carrot cake. To do this, half the tiles need to be melted in a steam bath and slightly cooled chocolate pour over the top of the cake, leaving picturesque streaks at the edges. Or, as a quick option, simply decorate the cake with chocolate chips.
