Where did the name “French meat” come from in relation to a rich dish with cheese crust, which in no way resembles a sample of French cuisine? It turns out that this culinary masterpiece was really offered by a French chef, and not just any, but the main manager of the kitchen of the French king Louis XVIII. The dish was created for the arrival of the guest of honor - Count Orlov, favorite of the great Empress Catherine.

In the classic recipe, which at the French court was called “Orlovsky veal”, tender calf meat, potatoes, onions and mushrooms were used. All this was baked with the addition of bechamel sauce, and for the formation of a golden crust, it was covered with grated cheese. That was the name of the very golden crust of cheese or breadcrumbs that was served to the honored guest with the dish, and ate separately outside the feasts, just as a treat.

For example, in Vladivostok it is called “captain's meat”, in the region of central Russia, it is called “Diplomat”. The interpretation of the dishes is also preserved in French cuisine. So in one of the regions of the country, in Alsace, it is prepared from meat, potatoes, coarsely chopped carrots and onions. But instead of cheese, whole pears are put in the last layer.

We recommend that you cook beef in French in a slow cooker, as close as possible to the classic version of the dish. You will need:

  • beef (or veal) - 500 g;
  • potatoes - 500 g;
  • onion - 4 heads;
  • butter - 50 g;
  • flour - 1 tbsp. spoon;
  • milk - 500 ml;
  • nutmeg, pepper, salt;
  • cheese - 300 g.

Cooking

  1. An important secret on how to cook meat in French in a slow cooker (Redmond, Panasonic, etc.) is its proper preparation. Beat and pickle beef first. To do this, use dessert wine, olive oil, black pepper. Mustard is also suitable, which can be lubricated with every bite. Leave the meat for 4 hours for marinating.
  2. Make bechamel sauce: melt the butter in a saucepan, add flour. Fry it until golden brown, then remove from heat.Pour in warmed milk, mix until the lumps disappear. Put it on the fire again, warm it up, add a pinch of nutmeg, boil for 5 minutes.
  3. At the bottom of the bowl, lay the meat in pieces, onion chopped in rings on top of it.
  4. Cut the potatoes into rings, lay on top of the onion, salt.
  5. Pour in bechamel sauce, sprinkle with grated cheese.

  • chicken fillet - 800 g;
  • onion - 2 heads;
  • garlic - 3 cloves;
  • hard cheese - 200 g;
  • processed cheese - 100 g;
  • mayonnaise - 2 tbsp. spoons;
  • vegetable oil - 2 tbsp. spoons;
  • pepper and salt.

Cooking

  1. Wash the fillet, cut into large pieces. Cover with foil and beat off.
  2. Pickle meat in a mixture of vegetable oil and your favorite spices, pepper. Leave for 1 hour.
  3. Grate the processed cheese, add the garlic and mayonnaise passed through the press to it, mix.
  4. Peel and chop the onion into rings, lay it on the bottom of the crock-pot bowl.
  5. Put the chicken fillet, on top - a mixture of mayonnaise and cheese.
  6. Sprinkle with grated cheese.
  7. Cook in baking mode for 40 minutes.

  • onion - 4 heads;
  • cheese - 200 g;
  • tomatoes - 2 pcs.;
  • mayonnaise - 2 tbsp. spoons;
  • salt and pepper.

Cooking

  1. Cut the meat into large pieces, beat, salt and pepper.
  2. Put the pork on the bottom of the bowl.
  3. On top, distribute 2 onions chopped into rings.
  4. Put the peeled and sliced ​​potatoes in ringlets, add salt, grease with mayonnaise.
  5. Wash mushrooms, dry, fry with the remaining onions until cooked. Put on a layer of potatoes.
  6. Cut tomatoes into rings, lay on top.
  7. Sprinkle with grated cheese, cook for 1 hour in the "Baking" mode.
