  • Water - 700 ml
  • Tomatoes - 500 g
  • Potato - 300 g
  • Zucchini (young) - 1 pc.
  • Carrots (small) - 2 pcs.
  • Onions - 1 pc.
  • Salt - 0.5 tbsp. l
  • Vegetable oil - 2 tbsp. l
  • Dill Greens - 1 bunch
  • Ground sweet paprika - 0.5 tsp.
  • Ground black pepper - to taste

Step cooking

Delicious vegetable soup can be prepared according to the following simple recipe with a photo:
  1. To begin with, wash all the vegetables and herbs under running water and dry with a towel. Peel the potatoes and cut into small thin slices.
  2. If the zucchini has a thick peel, then we clean it, if it is young enough, then we do not clean it. Cut it in half along. Each part is cut again into quarters, and then cut into thin quarter circles.
  3. To prepare this dish, take tomatoes sweet and meaty. We cut out the core, and on the other hand we make a deep cross-shaped incision.
  4. After that, put the tomatoes in boiling water for 10 seconds, and then take them out in a bowl of cold water. This must be done in order to easily peel tomatoes. We grab it with a knife in the place where the incision was made, and remove it with a whole piece. Diced peeled tomatoes.
  5. Finely chop the dill.
  6. We take a pot of 2 liters, pour water, put chopped potatoes, cover and put on fire. Bring to a boil, reduce heat and cook for 5 minutes with the lid closed.
  7. At this time, peel the onion and cut it into small cubes.
  8. Peel the carrots and cut into thin circles. Optionally, you can cut into strips, cubes, or grate.
  9. We put the pan on the fire and pour vegetable oil into it. Put the chopped onion in the heated oil and fry it until golden.
  10. Add carrot slices to the onion, mix and continue to fry until soft.
  11. After the potatoes are boiled for 5 minutes, put the sliced ​​zucchini in the pan and cook for another 5 minutes.
  12. Add prepared tomatoes and fried onions with carrots to the pan. Mix everything and cook for another 2-3 minutes.
  13. At the end of cooking, add salt, add paprika and pepper to taste.
  14. Pour the chopped dill into the pan and mix.
  15. Vegetable soup is ready. We pour it into plates and serve it to the table.
