Kitchen appliances and utensils:an oven, a baking sheet, parchment paper, a whisk, a large bowl or pan for kneading dough, a bowl or a small bowl for separately mixing kefir and eggs, a small bowl for the filling, a knife for cutting the dough.

Important! The amount of flour for making the dough can vary depending on how thick the kefir is. Very thick kefir was used in this recipe.

  1. To prepare the dough, pour 350 g of flour into a bowl, into which we grate 250 g of frozen butter on a coarse grater, grate the butter and flour in the process. Due to the consistency of the oil, it is very evenly distributed in the dough, and a loose mass should be obtained.

  3. In a separate bowl with a whisk, lightly beat 1 chicken egg and mix with 300 g of kefir until smooth, then add 1 tsp. soda. We can observe the instant reaction of kefir with soda.

  4. In a bowl with the bulk of the dough we make a deepening and pour out the previously obtained mixture of eggs and kefir. Knead the dough, gradually pour the remaining 300 g of flour. We are guided by the consistency, you should get a gentle, soft dough that should not stick to your hands. We cover it with cling film and send it to the refrigerator for 30 minutes, but for now we’ll deal with the filling.

  5. In a small bowl we put 70 g of slightly melted butter, pour 100 g of flour and rub it into a homogeneous mass with light, gentle movements. Pour 150 g of white sugar and 100 g of cane sugar. If cane sugar is frozen in lumps, it is recommended to slightly heat it in the microwave, and its loose properties will be restored. Carefully grind the resulting bulk mixture. Add 1 tsp. vanilla extract and 1 tsp. baking powder, mix until smooth. You should get a friable, golden mixture with a wonderful vanilla aroma, if you squeeze it into a fist, then for a while it will keep the shape of a fist. The filling is ready and we can proceed to the formation of cookies.

  6. Prepare a baking sheet in advance, which we cover with parchment paper. There is enough oil in the dough, so there is no need to grease the paper. We take the dough out of the refrigerator, divide it into three identical parts, two of which so far will go back, and we will work with the third. Lightly sprinkle the working surface and the dough with flour and roll into a rectangular layer 2-3 mm thick.

  7. We spread the third part of the filling on the dough, distribute it in an even layer and twist the dough, squeezing it into the roll so that the dough literally mixes with the filling and it becomes flatter. You should get a long, slightly flat sausage.

  8. We take a knife (if you can, you can take a figured one, it is also possible to use an ordinary kitchen knife) and cut the roll diagonally, the cookies should turn out about 4-5 cm thick.

  9. We shift the formed cookies onto a baking sheet, shake the egg yolk and grease it on top. You can draw ornaments to your taste with a yolk fork, this will give the liver an oriental shade and make it even more appetizing.

Important! You can adjust the degree to which you want to bake ghats yourself. If you prefer a drier cookie, then bake should be longer. If you are a lover of soft and tender goodies, then the time spent by the cookies in the oven will be much less.
