  • pan with a thick flat bottom;
  • corolla or scapula;
  • silicone mat for rolling dough;
  • rolling pin;
  • knife;
  • skimmer;
  • paper towels.

Ingredients

Product amount
Premium wheat flour 300 g
Chicken egg 2 pcs.
Milk 3.5% 50 ml
Butter (you can use sour cream 20%) 50 g
Granulated sugar 50 g
Powdered sugar (for sprinkling) 50 g
Salt 1/2 tsp
Vegetable oil for frying 500 g
Cognac or vodka (optional) 30 g

Step cooking

  1. Melt the butter in a water bath and sift the flour. Alternately add all the ingredients into a deep bowl or pan. First, chicken eggs, then milk.
    In a bowl, beat the eggs, add milk.
  2. Add salt, sugar, butter.
    We also add salt, sugar and melted butter.
  3. Mix well with a whisk. Optionally, add vodka or cognac. Alcohol will make cookies even crispier.
    Whisk these ingredients with a whisk.
  4. We introduce the sifted flour in stages, mixing thoroughly until smooth. It is very important to achieve a complete absence of lumps.
    Gradually sift the flour to the liquid components.
  5. After the dough becomes difficult to knead with a spatula or a whisk, put it on a silicone mat or table surface, previously sprinkling them with flour.
    When the dough becomes thicker, shift it onto a flour-sprinkled surface and knead with your hands.
  6. The dough should be tight but elastic. This will take about 10 minutes. As necessary, add a little flour. The dough can be considered fully prepared after it stops sticking to your hands.
    The test should be soft and supple.
  7. Next, cover with cling film and leave to rest for 30 minutes.
    Leave the dough to rest for half an hour.
  8. After that, grease the mat with vegetable oil so that the dough does not stick to it. Roll out the dough as thin as possible. The thinner the layer, the more crisp the brushwood will turn out.
    On the work surface greased with vegetable oil, roll out the dough as thin as possible.
  9. We take a pan with a thick flat bottom and pour oil into it so that it becomes hot. There must be a lot of oil so that brushwood literally boils in it.
    In a stewpan, heat the vegetable oil for frying brushwood.
  10. While the oil is heating up, cut the dough into long strips.
    Cut the rolled dough into strips of equal width.
  11. Next, we divide these strips into three parts, and in the middle of each piece we make an incision.
    We cut the strips into 3 parts each and make cuts in the center of the blanks.
  12. Twist the brushwood. We take this middle, rotate inward once, and then the second. This must be done with each strip.
    Two times pass one end of the workpiece through the resulting hole.
  13. Fry brushwood in hot oil. Note - it is fried very quickly. It’s better not to leave it, because in a minute it will need to be turned over.
    Put the prepared brushwood into boiling vegetable oil.
  14. Once the brushwood is browned, you can get it on a paper towel.
    Fried brushwood cookies should be transferred to paper towels to remove excess fat.
  15. After the cookies have cooled, you need to carefully sprinkle it with powdered sugar.
    The finished treat is additionally sprinkled with powdered sugar.
