Ready Puff Pastry 400 g
Eggs 2 squirrels, 1 yolk
Sugar 150 g
Vanilla sugar 7 - 8 g
Any nuts 150 g

For this recipe, 400 g of homemade or purchased instant puff pastry is suitable. If you have frozen dough, this is a lifesaver for you, it will help to quickly prepare different puffs, pies and even cookies, as in our case.
  1. We will prepare all the ingredients and the work surface. If you use frozen dough, you must first thaw it on the bottom shelf of the refrigerator or at room temperature. Prepare the filling. In a deep bowl, separate 2 squirrels and beat with a mixer at the highest speed into a strong foam. Squirrels will be easy to beat if they are fresh and chilled. Not a drop of yolk should get into the protein, and the container in which you beat must be dry and clean, without a drop of fat, otherwise the proteins will not break.

  2. When the proteins are beaten well enough, add one sachet of 7 - 8 g of vanilla sugar. Then, without stopping whipping the squirrels, pour a little, slowly, 150 g of sugar. The main thing is not to add all the sugar at once, otherwise it will dissolve immediately and the proteins will become liquid.

  3. For the filling you will need 150 g of nuts, it can be one type of nuts - walnuts, almonds, hazelnuts or a mixture of different nuts, choose to your taste. Nuts should be fried in a dry frying pan or in the oven, so that they become more flavorful, and then chopped with a blender, in a mortar or finely chopped with a knife. In whipped whites with sugar, add chopped nuts and carefully, slowly, mix, so that the whites do not settle, but remain lush and airy.
