  1. We take 500 g of wheat flour, add a teaspoon of salt and a tablespoon of starch to it, sift all the ingredients into a container for kneading the dough.
    Sift flour with starch.
  2. In a separate bowl, beat one chicken egg and 100 ml of light beer with a whisk until a uniform consistency is formed.
    Beat the egg with light beer.
  3. In a sifted wheat flour with dry ingredients, pour the egg beaten with beer.
    Add the egg and beer mixture to the flour.
  4. There we add butter, softened at room temperature (250 g).
    Add softened butter to the flour.
  5. We begin to gently knead the dough with your hands, combining all the ingredients into a soft, tender and homogeneous mass. The dough should be sticky and pliable.
    Mix the mass with your hands.
  6. We form a ball from the resulting mass, which must be wrapped in cling film (or plastic bag) and left in the refrigerator for two hours. The mass should rest well and cool.
    Knead the smooth dough, wrap it in cling film and put in the refrigerator.

Cookies preparation

  1. Cut the chilled dough into two equal parts.
    We divide the prepared dough in half.
  2. We roll out each part with a rolling pin until a very thin layer is formed, approximately equal in size.
    We roll each half of the dough into a thin layer.
  3. Sprinkle the entire surface of one layer with sugar, the amount of which depends on taste preferences.
    Sprinkle the rolled dough with flour.
  4. From above we impose a second, thinly rolled layer, we firmly press it to the first.

  5. We cover the entire surface with sugar, the quantity is determined according to taste.
    Sprinkle the second layer of dough with sugar.
  6. Sprinkled layers are doubled.
    Now we fold the glued layers of dough in half.
  7. Roll out the rolling pin into one large layer, which is also covered with sugar.
    Roll out the dough again and sprinkle with sugar again.
  8. We begin to roll the formation, forming a roll on both sides, reaching the middle.
    Starting from opposite edges, roll the dough into a roll until the middle.
  9. The resulting double roll is pressed a little and begin to cut small pieces (1-2 cm wide) - the future cookie.
    The resulting double roll is lightly pressed and cut into portioned slices.
  10. We put each piece in an upright position and gently roll it out, until the formation of cookies with a thickness of about 0.7 cm.

Baking

  1. We prepare the oven: preheat it to 200 degrees. The formed ears are laid out on a baking sheet covered with parchment paper.
    We spread the resulting cookies on a baking sheet.

    Before sending to the oven, sprinkle the cookies again with sugar.
