Step cooking

  1. We will prepare all the ingredients and the workplace. First, prepare the liver mincemeat. 500 g of pork liver are well washed under running water, dried and all films and veins are removed. Then cut the liver into pieces of arbitrary shape. Any liver is suitable for this recipe: chicken, beef, which you like to taste. Pieces of the liver are placed in a blender bowl. You can use a meat grinder.
    Cut the liver into pieces and put in a blender bowl.
  2. Drive one chicken egg into the liver. Close the blender with a lid and beat the liver until smooth, splendid and smooth. The better you beat the liver mass, the more magnificent cutlets you get. You can chop onions or garlic with the liver, experiment.
    Add the egg to the liver and grind everything with a blender.
  3. We shift the well-beaten liver into a deep bowl.
    Pour the liver mass into a bowl.
  4. Add 2 tbsp. l wheat flour, mix well. You don’t need to add a lot of flour, since the minced meat will become thick, and the cutlets will turn out tough. Instead of flour, you can add semolina. The consistency of minced meat should resemble the consistency of thick sour cream.
    Add the flour to the mass.
  5. Then pepper to taste, we do not add salt at this stage. You can add a pinch of nutmeg, it will add piquancy and a pleasant taste, or any other spices and spices that you like. You can leave the prepared meat for 30 minutes, during this time the flour will become viscous, and if you add semolina, it will swell, and the cutlets will turn out more magnificent.
    Add pepper to taste.
  6. Put the pan on the stove, pour 2 - 3 tbsp. l Flavourless vegetable oil and warm well.
    Heat the pan with vegetable oil.
  7. We spread one tablespoon of minced meat in a frying pan in the form of pancakes. Fry the patties over medium heat until the edges of the pancakes become golden.
    We spread the dough with a spoon into the pan, forming round cutlets.
  8. Then we turn them on the other side, reduce the heat and fry until fully cooked. Salt cutlets to taste only when you turn them upside down. Thus, fry cutlets from the whole liver mincemeat, adding vegetable oil, if necessary.
    Fry liver patties on both sides.
  9. We shift the finished cutlets on a paper towel to get rid of excess oil. Next, we put the patties on a plate, serve with sour cream. If desired, you can sprinkle with herbs. Liver cutlets are recommended to be served with mashed potatoes, rice, salad or vegetables. Enjoy your meal!
