  • white cabbage - about 500 g;
  • onions - 1 pc.;
  • wheat flour - 3 cups;
  • boiled water cooled to room temperature - 1 cup;
  • chicken egg - 1 pc.;
  • butter, melted - 50 g;
  • salt, garlic, ground black pepper and peas - to taste.

Cooking step by step

  1. Peel the cabbage from the top leaves, cut the stalk, rinse the prepared head of cabbage. Chop finely or scroll through a meat grinder, adding spices and garlic. Also put the butter previously melted. Leave it for a while to isolate the juice, which will then need to be drained.
  2. Prepare dumplings dough by adding water and one slightly beaten egg, as well as a little salt, to the flour sifted through a sieve or colander. Stir and knead. Then leave the finished dough, covered with a plastic bag, in the refrigerator for half an hour.
  3. Roll the dough into an improvised sausage, then cut it into equal slices. Roll out each slice with a rolling pin in the shape of a circle, put a cabbage filling in the middle of the circle with a teaspoon or hand, pinch the corners in the shape of “ears”.
  4. Boil them in salt water with spices, about 5 minutes after surfacing from the bottom of the pan.
The dough, left for some time in the refrigerator, under a plastic bag, will be more flexible and pliable material for hand sculpting. In the recipe, white cabbage can be replaced with red cabbage, which will add an interesting bright color to the dish!

With pickled

  • sauerkraut - half a kilo;
  • onions - 2 medium;
  • wheat flour - 3 cups;
  • boiled water - 1 cup;
  • egg - 1 pc.;
  • vegetable or olive oil - 100 g;
  • salt, ground black pepper and peas - to taste.

Cooking

  1. Peel and finely chop the onion, fry it until a pleasant soft golden color. Add sauerkraut, spices to the onion and simmer until cooked. Stir occasionally with a wooden spatula.
  2. Prepare the dough based on sifted flour, boiled water, beaten egg and a pinch of salt. Stir until a homogeneous structure does not stick to your hands, and then leave the dough for half an hour to "rest".
  3. Roll the dough into a plate and then cut circles out of it with an ordinary glass. Carefully put the filling in the circles, then pinch the corners, folding, for example, in half. Throw in already boiling water and boil for about 5-7 minutes.
The corners of the dough that you pinch manually will be better bonded and will not fall apart when cooking, if you grease them with egg white or cold water.

With minced meat

Dumplings with sauerkraut can be made with minced meat. Stuffing can be chosen to your taste, it can be chicken or even fish seafood. Cabbage dumplings with minced meat - an excellent recipe for those who do not observe fasting.

Dumplings with cabbage and minced meatYou will need:

  • white cabbage - one small head of cabbage or 400 g;
  • minced meat to choose - 500 g;
  • wheat flour - 3 cups;
  • boiled water at room temperature - 1 cup;
  • egg - 1 pc.;
  • salt, garlic, ground black pepper and peas, greens - to taste.

Cooking

  1. Rinse the cabbage and pass it through a meat grinder, adding salt and spices. Mix with prepared minced meat. If you take not fresh, but frozen minced meat, then it is better to pass it through the meat grinder again to make it softer. Mix the minced meat and cabbage into a single whole in an approximate proportion of 50/50.
  2. Prepare the dough on the basis of flour sifted through a colander, boiled chilled water, beaten egg and salt. Stir until smooth, not sticky to your hands, and then leave the dough for half an hour to rest.
  3. Roll the dough into a thin layer and then cut circles with a regular glass. Gently place the finished filling in them and pinch them. Lubricate with cold water if necessary or put in the refrigerator briefly.
  4. Boil cabbage dumplings with meat in boiling water for about 5-8 minutes with the addition of your favorite spices, and also modify the recipe to your taste.

Serve dumplings with cabbage and minced meat to the table can be both warm and cold with various sauces. Fresh cabbage in this recipe can be replaced with sauerkraut.
