Step cooking
- To get started, prepare a dough dough. In a saucepan on a stove or using a microwave, lightly heat 300 ml of milk. Then pour 100 ml of milk into a deep plate and pour 2 tsp into it. dry yeast.
- Add to the milk 2 tbsp. l sugar and sift 4 tbsp. l wheat flour. Mix all the ingredients well with a whisk and leave the dough to fit for about 15 minutes.
- Sift approximately 550-600 g of wheat flour and 1 tsp into a deep bowl. baking powder. Then dice 250 g of cold margarine and add it to the flour. You can grate the margarine.
- Hand grind flour with margarine into crumbs.
- In a separate deep plate, separate 2 yolks from the proteins. You will not need proteins in this case. Pour the remaining 200 ml of warmed milk into the yolks, pour 4 tbsp. l sugar, a pinch of salt, and mix well all the ingredients with a whisk. Optionally, add 1 tsp. vanilla sugar.
- Then add the matching dough to the plate with the milk mixture and mix gently.
- Pour the prepared mixture into a bowl with flour crumbs.
- Knead the dough with a tablespoon. Sift some flour if necessary.
- When the dough thickens, sprinkle a small amount of flour on the work surface and knead the dough on it with your hands until a homogeneous lump is about 7-8 minutes. Shortcrust pastry does not need to be kneaded for a long time so that finished products do not lose their friable structure.
- Then put the dough back in a bowl, cover with cling film and place in a warm place for about 2 hours.
- The finished dough is very lush and soft.
From a gentle and soft sand and yeast dough you can bake a variety of products - rolls and pies with any filling, cookies, bagels. If you reduce the amount of sugar in the dough, then it will be very successful to get pastries with savory filling - meat or vegetable pies, for example. This dough will allow your imagination to fulfill any culinary ideas.
