Step cooking

Dough

  1. 1 tsp dry yeast mix with 1/2 tsp. sugar, pour a little warm water. Water should be slightly warmer than body temperature. Set aside the resulting mixture for a while. Ordinary yeast needs to be infused longer, but instant dry yeast can be used almost immediately.

  2. Sift 200 g of flour, add a decent pinch of salt and 2 tbsp. l olive oil.
Add salt and olive oil to the flour.
  3. Pour the yeast mixture.
Pour the yeast into the flour.
  4. Add the remaining water. In total, about 125 ml will be needed. But it is worth considering that the total volume depends on the properties of the flour itself, so this figure can vary both up and down.
    Add the remaining water.
  5. Knead the dough.
    Knead the dough.
  6. Sprinkle a little flour on the table and put the dough on it to knead it properly. It should not be super dense, but soft and elastic. If the dough is very dense, it will not rise very well. The main thing is not to rush, and knead well. It will take about five minutes.
Next, knead the dough directly on the work surface, sprinkling it with flour.
  7. Wipe the walls of a small bowl with olive oil, put the dough in it and cover with cling film. After which we leave for 1-1.5 hours.
We spread the dough with a greased bowl, cover with a film and leave it in a warm place.

Tomato sauce

  1. Blanch tomatoes and peel. To do this, heat the water in a pan, cut the petiole and cut the skin. Next, immerse in hot water for a few seconds, and then transfer to a bowl of cold water.

We heat vegetable oil in a pan and pour Provencal herbs into it.
  5. Add chopped garlic, but the main thing here is not to overcook it so that it does not start to be bitter.
    Add the garlic.
  6. Next, add the tomatoes.
Pour the chopped tomatoes into the pan.
  7. We evaporate the tomatoes so that they turn into a thick paste. It is better to add sugar and salt to the paste, since it is likely that after evaporation of moisture the taste will be too salty.
    Boil the sauce until thickened.
  8. If desired, you can add a little ready-made tomato paste for a more saturated taste and color.
If desired, you can add a little tomato paste to the sauce.
  9. Add a little salt and sugar to taste.
Add salt to taste, as well as sugar.
Did you know? The easiest option to make tomato sauce is to buy tomatoes in their own juice, which are usually sold in cans. They can be either whole or already crushed. All that is required is a little to simmer them in a pan and add seasoning. But it is worth considering that the tomatoes in their own juice are quite acidic, and you need to add a lot of sugar in order to somehow balance the taste. Therefore, it is better to use fresh tomatoes.
