Ingredients

Wheat flour 300-350 g
Egg 2 pcs.
Sour cream 20% 100 g
Baking soda ⅓ tsp
Apple vinegar 1 tbsp. l
Salt 3 tsp
Pangasius fillet 1 PC.
Onion 1-2 pcs.
Round rice 100 g
Seasoning “Mix of Peppers” ½ tsp
Vegetable oil 2 tbsp. l
Egg yolk 1 PC.
Butter 70 g

Step cooking

Dough

  1. Add 100 g sour cream, 2 eggs, 70 g melted butter and 1 tsp to a bowl. salt. Mix until smooth.
    To prepare the dough, we take eggs, sour cream, melted vegetable oil.
  2. We extinguish a third of a teaspoon of soda 1 tbsp. l vinegar and also add to the resulting mass. Mix again.
    We quench the soda with vinegar and add the dough to the future.
  3. Sift 300-350 g of wheat flour and knead the dough. It should not stick to your hands, so add more flour as necessary.
    Pour the flour and knead the dough.
  4. We cut the soft dough into 2 parts and wrap each in a plastic wrap so that they do not wind off. Put in the refrigerator for 20-30 minutes.
    We divide the finished dough in half and send it to the refrigerator.

Filling

  1. We wash the pangasius fillet (or any other fish), remove possible bones and cut into small cubes. Sprinkle fish with salt and a mixture of peppers, and mix lightly with your hands.
    Cut the fish fillet into small pieces, salt, pepper.
  2. We wash the rice until the water is clean (about 10 times) and cook in a saucepan until cooked for 15-20 minutes.
    Cook rice until cooked, cool.
  3. Cut the onions into quarters and fry in a pan with the addition of oil until golden brown. Mix rice and onion, salt and pepper as needed. For greater satiety, you can additionally add chopped eggs, and for flavor - shredded greens and onion feathers.
    Add the fried onion to the golden rice.

Bake a pie

  1. Cover the baking sheet with greaseproof paper greased with butter.
    Cover the baking sheet with parchment and grease with oil.
  2. Each of the pieces of dough is rolled up to 5 mm in thickness.
    Roll out the first piece of dough.
  3. On one of them we spread the rice with onions, leaving the edges measuring 5-8 mm, and put the fish in the second layer.
    We spread a layer of dough on a baking sheet, on it we level the rice with onions, and on top of it we spread the fish.
  4. Cover the filling with a second sheet of dough and pinch the edges.
    we roll out the second piece of dough and cover it with a pie.
  5. To prevent the cake from bloating in the oven, pierce it with a fork in different places.
    We prick the pie with a fork so that it does not swell when baking.
  6. For a delicious golden crust, grease the cake with a mixture of egg yolk and 1 tbsp. l water.
    Grease the cake with whipped yolk.
  7. We will bake the cake in a preheated oven to 200 ° C for 40-45 minutes.
    We send the product to the oven.
  8. After cooking, let the cake cool. It can be served with fresh herbs, sour cream, mayonnaise and tomato sauces.
