Step cooking

  1. First of all, you need to defrost puff pastry. To do this, remove it from the freezer and leave it at room temperature for several hours. Cook the cream. Remove the zest from the lemon, it will take 1 tsp. Take a saucepan, pour 200 ml. milk, add ¼ tsp. cinnamon, lemon zest and bring everything to a boil. In a separate container, mix 100 ml of milk with 1 tbsp. l vanilla pudding. Mix well and add 35 g of wheat flour previously sifted through a sieve, mix until smooth. Pour the resulting flour mixture in a thin stream, stirring constantly, pour into boiled milk. Continue to keep the mixture on medium heat until it thickens a little.

  2. Make sugar syrup. Mix 100 ml of water with 200 g of sugar, put on medium heat. Stir the sugar crystals to dissolve and bring to a boil.

  3. Pour the syrup into the milk mass, mix well until smooth. Remove from heat and let cool to about 50 degrees. Strain the resulting mass through a fine sieve. After that, it will become smooth and uniform. Take 4 eggs and separate the whites from the yolks. Try to prevent squirrels and flagella from getting into the yolks. Whisk the yolks with a whisk, they should lighten. Take whipped yolks into strained mass, mix thoroughly. The cream is ready.
