Ingredients

Basmati Rice 400 g
Carrot 1 PC.
Bow 1 PC.
Water 800 ml
Pork 800 g
Fennel Grains pinch
Zira pinch
Vegetable oil 1 tbsp. l
Salt taste
Peanut 50 - 70 g
Dried apricots 150 g
Garlic 1 head

Step cooking

  1. Since pilaf will be baked in the oven, we will fry all the ingredients immediately in a pan. Therefore, the pan or stewpan should be with a thick bottom. We start cutting vegetables. We clean the medium-sized carrots and cut into small cubes so that it is quickly cooked and does not stand out much.
    Cut the carrots into small cubes.
  2. We also clean one onion and cut into a small cube.
    Cut the onion in the same cube.
  3. At one head of garlic, carefully, without violating the integrity, cut off the bottom with a sharp knife and remove only one top layer of scales, rinse.
    We remove only the husk from the garlic and cut the bottom.
  4. We wash 800 g of pork neck under running water and dry with a kitchen towel. We cut the meat with a medium cube. For cooking pilaf, you can use absolutely any meat - chicken, beef, lamb, turkey, the choice is yours.
    Cut into slices of pork neck.
  5. We put the pan on a strong fire, pour 1 tbsp. l vegetable oil and heat.
    We heat the pan with a thick bottom, pour the vegetable oil.
  6. First, fry the prepared meat, the moisture from the meat should evaporate, and brown the pieces.
    We put the meat in a pan and fry a little.
  7. Next, add onions, carrots and a head of garlic, continue to fry over high heat.
    Add prepared vegetables to the meat.
  8. Then salt to taste, add a pinch of fennel grains, a pinch of zira, mix so that the spices reveal their aromas.
    Add spices, mix.
  9. We wash 150 g of dried apricots and send to the pan, you do not need to cut it, fry a little. Dried apricots gives the dish a sweet and fruity note. You can also add raisins.
    Add washed apricots to the dish.
  10. Pour 400 g of basmati rice and pour 800 ml of cold water. Basmati rice is ideal for pilaf, as it contains less starch and during cooking it will not stick together, but will remain crumbly.
    Put rice in the pan and pour water.
  11. The pan with pilaf, without covering, is sent to the middle level in a preheated oven to 180 degrees for 40 minutes until cooked.
    Close the pan with a lid and send it to the oven.
  12. Put the prepared pilaf in the plate, sprinkle it with plenty of salted peanuts, decorate with herbs and serve. Peanuts add an unusual flavor and a pleasant crunch. Enjoy your meal!
