Kitchen appliances and utensils: gas or electric stove, frying pan, cutting board, knife, plates for ingredients, sieve, kitchen spatula, grater.

Onion 1 PC.
Flour 1.5 tbsp. l
Sour cream 2 tbsp. l
Milk 1/2 stack
Water 250 ml
Salt pepper taste

Step cooking

  1. We take 500 grams of fresh pork liver, rinse it and cut into small pieces on a cutting board.
    Cut the liver into pieces.
  2. Pour the chopped liver ½ cup of milk and leave the liver to infuse for about 40 minutes. Milk will make the liver much softer, more airy, and also remove the bitterness.
    Soak the liver in milk.
  3. After 40 minutes, carefully drain the milk from the liver through a kitchen sieve.
    Then we recline the offal on a sieve.
  4. On a gas or electric stove, put the pan in vegetable oil to warm up. When the oil warms up well, put the beef liver in it and fry over medium heat.
    Fry the liver in a pan.
  5. After 2 minutes, salt and pepper the liver to taste and mix thoroughly with a kitchen spatula.
    Salt the liver.
  6. While the liver is fried, we chop 1 medium onion into cubes and rub 1 medium carrot on a coarse grater.
    Grind onions and carrots.
  7. As soon as the liver is fried on both sides, add chopped onions and carrots to it, mix thoroughly. Fry until onions and carrots are soft, it takes an average of 4-5 minutes. The liver cooks very quickly, so it’s not necessary to overcook it.
    Add vegetables to the liver in a pan.
  8. Next, take 1.5 tablespoons of flour and put it in a free place in the pan, mix with a kitchen spatula a couple of times and then mix with the liver and onions so that the flour is well absorbed in the future gravy.
    Add flour to thicken the gravy.
  9. We take 250 milliliters of pure water and slowly pour it into the liver, mixing thoroughly. Leave about 60 milliliters of water.
    Add water.
  10. When a dense mass is formed, add 2 tablespoons of sour cream and a slide to it and mix thoroughly and add the remaining 60 milliliters of water. Mix well. It is better to take sour cream not too fat.
    Add sour cream, mix.
  11. Once again, add salt and pepper to taste to taste, as we added water and sour cream to it.
    Salt and pepper the gravy again to taste.
  12. Reduce the heat to the very minimum and leave to boil for 5-7 minutes, this will be enough. We cover the pan with a lid, turn off the heat and let it simmer there for another 5 minutes, it does not need to be stirred.
    Let the gravy boil a little more.
  13. Gravy is ready, you can serve it as a side dish for potatoes, buckwheat or rice, it will be very tasty! Enjoy your meal!
