Step cooking

Knead the dough

  1. In a bowl for kneading dough, break one chicken egg at room temperature. Beat the egg with a whisk until a homogeneous yellow consistency is obtained.

  2. We add 80-100 g of granulated sugar there, and then we thoroughly mix the components, trying to dissolve the sugar grains as much as possible. If desired, 40 g of sugar and 40 g of honey can be added to the dough, then the donuts will have a wonderful honey aroma and an incomparable floral taste.

  3. Pour 250 ml of kefir into the resulting mixture. For this recipe, it is best to use stale kefir. We recommend buying this component 3-4 days before the planned donut preparation.
    Add kefir to the egg mass.
  4. On top of kefir, add 1 pinch of salt, 5 g of soda and 30 g of butter. The oil must first be melted, and then slightly cooled to a warm state.
    Introduce soda, salt, melted butter into the dough.
  5. Beat all components well with a whisk until a homogeneous, viscous mixture is obtained.
    Mix the liquid ingredients.
  6. Separately, sift 390-410 g of premium flour, and then add it in small portions to the cooked egg-kefir mass.
    Add the flour in parts.
  7. As soon as the kneading of the dough with a whisk becomes too laborious, sprinkle the table with flour and transfer the sticky and sticky dough to it.

  1. The table top is lightly greased with vegetable oil. In no case do not roll donuts on flour, otherwise they will burn during frying. Divide the dough in half.
